SPICY SLOW-COOKED COUNTRY RIB TACOS

Spicy Slow-Cooked Country Rib Tacos image

Steps:

  • For the barbecue sauce: In the bowl of a blender, combine the ketchup, apple cider vinegar, molasses, mustard, garlic, chipotles and sauce and onion. Season generously with salt and pepper. Blend until smooth.
  • For the ribs: In a small bowl, combine the garlic powder, paprika, brown sugar, cayenne, chili powder, 2 tablespoons salt and 2 teaspoons black pepper. Sprinkle the ribs with the rub on all sides.
  • In a skillet, warm the olive oil over medium-high heat. When shimmering, add the ribs and brown on all sides, working in batches if necessary. Transfer to a slow cooker.
  • Add the barbecue sauce, Mexican oregano and enough chicken stock to come halfway up the ribs. Set the slow cooker to high and cook, 8 to 10 hours. Remove the ribs and shred the meat into bite-sized pieces. (Discard the fat.) Taste the sauce and adjust the seasoning if necessary. Whisk to combine (the sauce may separate during cooking) and transfer to a serving bowl.
  • Construct tacos by spreading the tortillas with sauce and topping with pork, cucumbers, avocado wedges, cabbage, Cotija, radishes, pico de gallo and cilantro. Serve immediately with lime wedges.

4 1/2 pounds meaty country-style pork ribs (about 4 pieces total; cut 1 1/2- to 2-inches thick)
2 tablespoons olive oil
2 teaspoons dried Mexican oregano
3 cups chicken stock, plus more as necessary
12 to 16 corn tortillas, warmed in a skillet or charred over a flame
1/2 English cucumber, thinly sliced, for serving
1 avocado, cut into thin wedges
1/8 red cabbage, thinly sliced
1 cup crumbled Cotija cheese
5 radishes, thinly sliced
Pico de gallo, for serving
Cilantro sprigs, for serving
Lime wedges, for serving

MEXICAN BARBECUE COUNTRY STYLE RIBS

This is a recipe i made up 2 weeks ago. It is medium spicy and my family loved it. We love ribs and sauerkraut so I served sauerkraut on the side. I only use Franks sauerkraut, it has just the right taste. You may not think that the ingredients don't sound good but all the flavors will come together.

Steps:

  • Rub the ribs with chili powder and cajun spice.
  • Place oil in frying pan and brown ribs on all sides.
  • while browning ribs take casserole dish and line with foil so you can seal ribs in dish with foil.
  • when ribs are browned place in casserole dish.
  • pour BBQ sauce over ribs.
  • pour 1 cup of salsa over ribs.
  • chop onions and peppers and saute in same pan as ribs.
  • place onions and peppers over and around ribs.
  • mix red wine and worcestershire sauce to deglaze pan and pour over ribs.
  • add water to dish.
  • open can of tomatoes and pour over meat.
  • fold foil over so you seal the dish.
  • bake in oven at 375 for about 1 1/2 to 2 hours.
  • check ribs after 1 1/2 hours and add a little more water if needed.
  • heat sauerkraut in pot
  • The meat should fall off when checked with fork.
  • when done remove meat from dish and use the sauce in dish over meat or potatoes.
  • Serve with your favorite veggie and salsa on the side and sauerkraut.

16 ounces chunky salsa
1/4 cup Mexican chili powder
1 (16 ounce) can diced tomatoes, I used the ones that have spices already in them. (the label says mexican style)
2 green peppers
1 large onion, you may use as many as you like
2 tablespoons Worcestershire sauce
2 cups red table wine (optional)
1/2 cup water
1/2 cup cajun spices
2 tablespoons olive oil
1 (27 ounce) can sauerkraut (optional)
1 cup barbecue sauce

  • Place ribs and onion in a 3-qt. slow cooker. In a small bowl, combine the remaining ingredients. Pour over ribs. Cover and cook on low for 5-1/2 to 6 hours or until a thermometer reads 160°.

  • Preheat the oven to 300°F. Heat a couple of drizzles of olive oil in the bottom of a dutch oven or heavy bottomed oven safe skillet. Mix together the brown sugar, minced chipotle peppers, minced garlic, lime juice, cumin, chili, paprika, garlic salt, oregano, pepper and cinnamon. Rub the paste onto the ribs on all sides. Sear the ribs turning as needed in the dutch oven.
  • After searing on all sides, drizzle the ribs with the barbecue sauce and arrange the onion wedges on top. Drizzle with the Rotel tomatoes.
  • Cover tightly and braise in the oven for 3 hours or until the meat easily pulls apart with a fork. Rest for 15 minutes before serving.
  • Serve on a scoop of rice, on toasted baguettes drizzled with additional barbecue sauce topped with slaw, or on warm tortillas with your favorite taco toppings.

  • In a large stockpot, place the ribs, onion, garlic cloves, and bay leaves. Cover with 4 cups of water, place the lid on the pot and simmer for about 45 minutes up to an hour. Turn off the heat when the meat is tender, but still attached to the bone.
  • While the meat is cooking, lightly toast the peppers for a few seconds on a warm griddle. Make sure to remove them promptly.
  • Once the ribs are cooked, remove from the pot and drain. Heat a large skillet over medium heat. Place the ribs in the skillet and lightly fry them in their own fat. The ribs will render their own fat, but in case your meat doesn’t have enough fat, add a tablespoon of vegetable oil into the frying pan first, then add the ribs once it is hot. Turn the ribs to have an even browning.

  • Dust all sides of your pork with the dry spices, be generous this is where you meat is going to get most of its flavors. Then place the spareribs in a single layer in a big heavy bottomed Dutch oven. Add the bay leaf, garlic, and onion to the pot. Then add the braising liquid, only use enough water to just cover the meat. Put the meat on the stove top without a lid and let it simmer for at least 3-4 hours.
  • In a microwave safe container mix all the sugar, salt, vinegar and lemon juice, heat in the microwave just until hot. Stir until sugar and salt dissolve. In a non-reactive bowl put you thinly sliced onion, pepper corns, hot peppers, and garlic. If you like spice feel free to add more jalapeño or switch it up and go with habanero peppers. Then pour the hot vinegar over the onions and stir. Pickled onions only get better with time so feel free to make them in advance and store them in the fridge. Don’t forget to fish out the peppercorns before you serve, someone could break a tooth.
  • Mix all the diced ingredients together and if you can find it feel free to add one or two tomatillos. I don’t add any lime juice or salt to this relish mostly because there is plenty of salt and lime on the carnitas, but if you use this for anything else you may want to add some of both.
