MICHELLE'S DAD'S PARTY MEATBALLS
I got this recipe at my wedding shower and it is a great hit. DH isn't allowed to bring anything else to his potlucks at work and everyone looks for them at church potlucks too! Really easy, but really good! We prefer all beef meatballs, but that is just personal preference. Pepper jelly is good if you like a bit spicy. I often use all the little bits of jelly left in the fridge to equal 12oz. DH likes to use apricot jelly the best. If you have any leftover, they are great over noodles.

MY DAD'S FAMOUS MEATBALLS
I grew up on these meatballs. My dad use to make them all the time and now I do for my family and friends and everyone loves them. We make a lot so we can have spaghetti one night and the meatball subs the next! To be honest I made the measurements as best I could but it goes by your own judgment. Once the eggs and bread crumbs are mixed you just shake the spices over the meat to cover evenly.

Steps:
- Place the ground beef ( 7% fat is best ) in a large mixing bowl.
- Preheat oven to 375°F.
- Then place eggs and bread crumbs in and mix well with your hands.
- Then put in all spices. The best thing to do is sprinkle them over the mixture evenly. I made the measurements the best I could, but I have never really measured before. I only went by my own judgment.
- Using a broiling pan so that the grease drips down inside of it, roll your meatballs according to size.
- Bake for about 20 minutes, turning the meatballs half way through.

COCKTAIL PARTY MEATBALLS
Don't hate just because this is simple. I made this for a Christmas party with all of my business school friends and they loved it! I recommend using the Wolf's Neck Farm Organic Beef Meatballs. They are very tasty, organic and from my home town Freeport Maine.

PARTY SWEDISH MEATBALLS
My Mom's best friend used to bring this dish over when she visited on weekends. I finally got the recipe from her and have made them for many parties, BBQ's etc. They are usually a real hit! Although some may like serving them with egg noodles, I always served them without them and more as an appetizer. Either way, try to double the recipe for the sauce. I like mine in tons of extra sauce ESPECIALLY if you have them on a sterno! the sauce dries out fast, so double the sauce! but instead of 4 pks of brown gravy, only use 3 when doubling it. Double everything else

Steps:
- Place meat in large mixing bowl.
- In another small bowl, add the coffeemate and the water and mix together stir quickly & pour this over the meat.
- Add the breadcrumbs, salt, eggs, onion & basil and start kneading together by hand until all ingredients are very well blended. *Note, I place my onions and basil in a mini food processor and it is so much better for the meatballs because you dont get those chunks of diced onion or basil.
- Roll meatballs into mini golf ball shaped sizes and place on ungreased cookie sheets about 2" apart.
- Bake in oven (center rack) at 350 deg. for about 5-7 minute About halfway through cooking time, I use tongs and turn the meatballs over so that the raw sides get cooked. I bake mine a little longer until dark brown color & centers are fully cooked.
- Remove meatballs and place in a deep baking/casserole dish & set aside.
- For the sauce.
- Mix water and gravy mix in a sauce pan over low heat until mix dissolves. Bring to boil then add the salt, pepper & container of sour cream. You must stir constantly until all sour cream dissolves and the sauce becomes a caramel color with no white left.
- Pour sauce over the meatballs and put either on sterno rack to start cooking/thickening sauce or bake in oven on low temp setting of about 250 or so. The sauce will thicken but keep temp on low setting until you serve or they can dry out fast.
MOM'S RICE & MEATBALLS (WITH PICKLES)
My husband's Mother has been making this recipe for years and I don't know exactly where she found it, but he seems to want me to make it for every special event in his life. Keep in mind that the saltine crackers, condensed soup and pickles all have a lot of salt, so you don't need to add a lot to the meat. I've made this recipe in a pot on the stove (simmer about an hour) or in the crock pot on low for 4 hours; works well either way. Enjoy!
