CREAMED PEARL ONIONS

Steps:
- Blanch the pearl onions by placing them into a large pot of rapidly boiling water. Cook them for about 1 minute. Remove the onions from the water with a strainer, then plunge into an ice bath to stop the cooking process. Drain them, then remove the skins.
- Put the onions in a 3-quart saucepan and place over low-medium heat. Add the cream, bay leaves, parsley, garlic and nutmeg. Season with salt and pepper. Cover and let simmer for 10 minutes, stirring occasionally, until thickened. Then, remove the cover and add stock. Season again. Allow to cook down for 5 minutes to tighten up the cream sauce. Discard the garlic clove and bay leaves before serving.
EASY CREAMED ONIONS
My great-grandma's recipe. Always a favorite at Thanksgiving dinner. Worth using fresh onions instead of frozen.

- Bring water and salt to a boil in a small saucepan; cook onions in the boiling water until just tender, 5 to 10 minutes. Drain, reserving 1/2 cup water in saucepan, and return onions to pan. Add butter to onions.
- Mix milk and quick-mixing flour together in a bowl; add to onion mixture. Cook and stir over medium-low heat until thickened, 10 to 15 minutes. Stir in more quick-mixing flour if mixture is too thin.

- In a large skillet or Dutch oven, saute onions in butter until tender and golden brown, about 25 minutes. Remove with a slotted spoon. Add flour, salt and pepper to skillet; stir until smooth. Gradually stir in milk until blended., Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat to medium. Return onions to the pan; heat through.

- Peel and slice onions 1/4 inch thick. Combine onions and water in a 1 1/2-quart casserole. Microwave on HIGH, 3 1/2 minutes. Stir and microwave 3 1/2 minutes more, or until onions are tender; drain off liquid. Combine remaining ingredients in a microwave bowl and mix well. Microwave on HIGH for 1 1/2 minutes; stir and microwave 1 1/2 minutes more or until thickened. Pour sauce over onions, toss to coat, and microwave on medium 2-3 minutes or until thoroughly heated. Fun Fact: Jackson Hole, Wyoming, was originally named Jackson's Hole for Davey Jackson, a mountain man who trapped in this area during the late 1800s. "Hole" was a term used at that time to describe a high mountain valley. The Jackson Hole Ski Area in Wyoming has the longest continuous vertical rise of any ski area in the United States. MICROWAVE CREAMED SPINACH
This is a top-notch version of the steakhouse classic. We make it with fresh spinach, which stays deep, bright green when cooked briefly in the microwave, and finish it with a crisp topping of toasted breadcrumbs or fried onions.

- Place spinach and 2 tablespoons water in a microwave-safe large bowl. Cover tightly with plastic wrap; cut a small slit in the center with the tip of a paring knife to vent excess steam. Microwave on high (at 100 percent power), stirring halfway through, until the spinach is just wilted, 3 minutes in an 1,100-watt oven or 6 minutes in a 700-watt oven. (When removing the plastic wrap, be careful to avoid the hot steam.)
- Scatter the onions, garlic, butter, 1/4 teaspoon salt and a couple grinds of black pepper in a microwave-safe 8-inch square baking dish. Cover tightly with plastic wrap; cut a small slit in the center. Microwave on high (at 100 percent power) until the onions are soft and translucent, 5 minutes in an 1,100-watt oven or 8 minutes in a 700-watt oven. If the onions are still a little hard, microwave again, covered, in 30-second increments, stirring after each.
- Squeeze the wilted spinach completely dry, and place in the baking dish with the onion mixture. Add the heavy cream, cream cheese, Parmesan, cayenne, nutmeg, 1/4 teaspoon salt and a few grinds of black pepper, and stir to combine. Microwave, uncovered, on high (at 100 percent power) for 5 minutes in an 1,100-watt oven or 7 minutes in a 700-watt oven. The spinach should be hot and bubbly and the cream slightly thickened. Add the lemon juice, and stir. Top with breadcrumbs or fried onions and some lemon zest.
CREAMY BAKED ONIONS

- Heat the oven to 200C/fan 180C/gas 6. Peel and trim the roots of the onions but leave them whole. Cook in a large pan of boiling water for 25 mins until tender, then drain, reserving a little cooking water.
- Season the cream and mix in 2 tbsp of the onion water. When the onions are cool enough to handle, slice each in half through the root. Lay the onion halves, cut side down, in a large baking dish with the bay leaves. Pour over the cream, scatter with the Parmesan, and bake for 25 mins until the cream is bubbling and the onions are just beginning to brown.

- Peel onions and cut in half horizontally. Place in a 1-quart casserole dish.
- Top each onion half with salt and pepper to taste. Add a pat of butter, using 1/2 teaspoon to 1/2 tablespoon per onion.
- Cover and cook at 100% power (HIGH) for 8 to 10 minutes, or until onions are soft.
- Uncover and top each half with shredded cheese to taste.
- Pop back in microwave and zap just long enough to melt the cheese.
- If you prefer, bake the onions one hour in a conventional 350-degree oven, topping with cheese when baking has finished.
- An alternate topping: Prepare onions as above, but top each half with 1/2 tablespoon EACH butter and brown sugar.

- Cut slice off bottom root end of onion so it stands upright.
- Cut cone shape out of top of onion with small sharp knife, leaving at least 1/2 inch intact in bottom of onion.

- Place bouillon cube and butter in hole in onion.
- Fill bowl with water, covering onion halfway up side.
- Cover onion and bowl loosely with waxed paper; microwave at HIGH 5 to 6 minutes or until onion is tender and can be separated with fork.
- Serve broth with onion, if desired.
