SWEET RELISH WITH CUCUMBERS AND CAULIFLOWER RECIPE - (4.2/5)

- Roughly chop the cucumbers, cauliflower, onions and peppers into chunks. Pulse them through a food processor until they are a fine dice with a few larger pieces to add some texture. Place all the veggies into a large bowl and sprinkle the salt over the top. Add the boiling water, cover the bowl and let it sit on the counter for a couple of hours or even overnight is fine. Drain the mixture well, continuing to press the residual liquid through the strainer until very little remains. Place the mixture into a large pot and add the vinegar, sugar, mustard seed, celery seed and turmeric. Bring to a boil over medium heat, stirring often. Boil gently for 30 minutes. Make a slurry of the cornstarch and water and stir it into the boiling relish. Cook for another minute or two until it thickens slightly. Pour into HOT sterilized pint jars and seal. I personally do not do the boiling water bath method, I simply ensure my jars are really hot when I fill them with the hot mixture and I seal them tightly. Within a couple of hours of resting on the counter each pint jar's seal "popped" so I know they are well sealed before storing. (For added assurance against spoilage you may choose to process the jars by placing them in a pot and cover the jars with water. Bring the water to a boil and process for 10 minutes.) The relish tastes great right away, but the flavors really blend together well as time goes by. We usually open the first jar after a month or so. Enjoy! - Grind all Step1 ingedients up with a food processor.
- Cover with 3/4 cup pickling salt to 2 quarts of water.
- Let brine stand overnight.
- In the AM, drain the mixture well.
- Then add the Step2 ingredients except for the flour and vinegar.
- Bring to a boil.
- Mix 1 cup of flour with the vinegar to make a smooth paste.
- Add some of the hot mixture to the paste before mixing it together.
- Cook for about 10 minutes.
- Pour into sterilized jars.

- Coarsely grind all vegetables. Place in large vessel. Mix coarse salt & hot water, pour over vegetables & let set overnight.. In morning, swish around & drain. Place in large pot with the mustard seed, tumeric, celery seed, sugar & vinegar. Bring to boil & boil until glossy, about 20 min. Thicken with 3 tbsp. cornstarch in small amount of water.
UNCLE GREG'S MILLION DOLLAR RELISH
This is my uncle's version that he uses, just slightly different from the other Million Dollar Relish recipe posted, but I've tasted this one and I love it so I didn't want to fix what wasn't broke. It is the only thing I want on my hamburgers....YUM! Prep time includes 8 hours standing over night and cook time does NOT include the optional water bath time of 10 min per set. (It would only take 30 min to water bath the batch)

- Grind and drain the vegetables. Put them in a large bowl.
- Add 1/2 cup of pickling salt to the 1/2 gallon of boiling water and pour the whole mixture over the vegetables. Let stand covered on the counter over night.
- Sterilize your bottles, lids and utensils.
- In a large pot mix the 4 cups of sugar, turmeric, mustard seed and celery seed with a whisk until well mixed, then add the 3 cups of cider vinegar. Add the drained vegetables and bring to a boil.
- In a separate bowl, sift the cornstarch and remaining 2 cups of sugar until well combined. Add the remaining 2 cups of cider vinegar. Whisk until the dry mix is dissolved.
- Gently add and stir the cornstarch mixture into the vegetable mixture and cook for 20 minutes to thicken.
- Ladle the hot relish into hot sterilized jars, leaving 1/4 inch headspace and seal. While my family has always said it's not necessary, I hot water bath them for 10 minutes as an added precaution.

- Place the cucumber, onions, pickling spice and water in a large bowl. Allow the mixture to stand 6 to 8 hours, or overnight.
- Drain liquid from mixture. In a large saucepan, mix the cucumber mixture, turmeric, celery seed and white sugar. Pour in the vinegar, adjusting the amount so that it covers the mixture. Bring to a boil. Transfer to sterile jars. Store in the refrigerator.

SWEET ZUCCHINI RELISH
My mother's sweet zucchini relish is a family favorite. It's delicious on hamburgers and hot dogs.

- Place the zucchini and onion in a large, non-metallic bowl, and sprinkle the salt overtop. Use your hands to evenly mix the salt throughout the zucchini. Cover, and refrigerate overnight.
- The following day, drain the zucchini in a colander, and rinse well with cool water. Squeeze out excess water and set aside. Place the red and green bell pepper, sugar, vinegar, and cornstarch into a large pot. Add the nutmeg, turmeric, celery seed and pepper. Stir to combine, then add the drained zucchini. Bring to a boil over medium-high heat, then reduce the heat to medium-low, and simmer 30 minutes.
- Meanwhile, sterilize 7 one-pint jars and lids to hold relish. Pack relish into sterilized jars, making sure there are no spaces or air pockets. Fill jars all the way to top. Screw on lids.
- Place a rack in the bottom of a large stockpot and fill halfway with boiling water. Carefully lower jars into pot using a holder. Leave a 2 inch space between jars. Pour in more boiling water if necessary, until tops of jars are covered by 2 inches of water. Bring water to a full boil, then cover and process for 30 minutes.
- Remove jars from pot and place on cloth-covered or wood surface, several inches apart, until cool. Once cool, press top of each lid with finger, ensuring that seal is tight (lid does not move up or down at all).
