Mini Hot Dog Octopus Mac N Cheese Recipes

Steps:

• Cut wieners lengthwise in half, starting each cut about 1 inch from one end of each wiener. Roll each wiener one-quarter turn and cut a second lengthwise cut, again starting about 1 inch from uncut end. (This will form 4 legs for each octopus.) Use sharp knife or kitchen shears to cut each leg lengthwise in half, about 1 inch from uncut end, creating a total of 8 legs for each octopus. Poke 2 holes into the uncut portion of each wiener for the eyes.
• Prepare Dinner as directed on package, using the Light Prep directions. Meanwhile, add wieners to separate saucepan of boiling water; cook as directed on package, watching each wiener turn into an octopus right before your eyes.
• Spoon Dinner into 4 serving bowls; top each with a wiener octopus.

Steps:

• Boil a large pot of water for macaroni. Salt water and under cook macaroni, cook about 7 minutes until just under al dente in doneness.
• Preheat broiler and set rack 12 inches from heat.
• While pasta works, heat a large deep nonstick skillet over medium-high heat. Add 1 tablespoon extra-virgin olive oil, 1 turn of the pan, then add hot dogs and brown on both sides, 4 minutes total. Remove the dogs with a slotted spoon to a paper towel lined plate. Add another tablespoon extra-virgin olive oil, 1 turn of the pan, and the butter. When butter melts, cook onions 4 to 5 minutes, then add flour and cook another minute. Add beer and cook off completely, 1 minute. Whisk in milk and bring to a bubble, then season the sauce with salt and pepper and stir in the mustard and ketchup. Lower heat and add 2 cups of the cheese. Stir to melt, 1 minute. Adjust mustard, ketchup, and salt and pepper, to your taste.
• Drain pasta well. Combine pasta and hot dogs with sauce and coat evenly then pour into large casserole and top with remaining cheese. Melt and brown cheese under broiler, 2 minutes. Serve.

• Blend together the hand-grated and pre-grated Cheddars in a bowl. Set aside.
• Preheat griddle to medium heat. Ladle 4 pancakes on the griddle at a time; do not overcrowd. Add 1/4 cup macaroni to each pancake, followed by 1/2 hot dog per pancake, if using, followed by 1/3 cup Cheddar per pancake. When you notice the edges bubbling vigorously, spray the entire pancake and griddle with nonstick spray, then flip the pancakes. • Slice habanero in half and place in a saucepan with maple syrup. Bring up to a full boil and turn off right away to avoid boil-over. Let stand for 3 hours. Strain out pepper.

• Let dough stand at room temperature until soft enough to shape, 15-20 minutes. Cut each roll in half; shape each half into a 3-in.-long mini hot dog bun. Place 2 in. apart on greased baking sheets., Cover with greased plastic wrap; let rise in a warm place until almost doubled, about 45 minutes. Preheat oven to 350°., Bake buns until golden brown, 12-15 minutes. Remove from pans to wire racks to cool completely., In a 15x10x1-in. baking pan, toss bread crumbs with onion, oil, salt and pepper. Bake at 350° until golden brown, stirring once, 5-7 minutes. , Cook hot dogs and macaroni and cheese according to package directions. To serve, cut hot dogs crosswise in half. • Cut hot dogs in half. To make the 'legs' of the octodog, make 3 cuts on 1 side of each hot dog, leaving about 1/3 the rounded top of the hot dog for the 'head'. Turn hot dog over and make 3 more cuts, so you have 8 'legs'.
• Place the octodogs in the boiling water until cooked through and the 'legs' curl up, about 1 minute.
