- Line 9-inch round pan with plastic wrap, with ends extending over side of pan. Beat Neufchatel cheese and 1/4 cup sugar with mixer until blended. Add dry gelatin mix, zest and juice; mix well.
- Whisk in COOL WHIP and mint; pour into prepared pan. Mix pretzel crumbs, remaining sugar and butter; sprinkle over pudding mixture. Cover dessert with ends of plastic wrap; use to gently press crumb mixture into filling.
- Freeze 3 hours or until firm. Invert dessert onto serving plate; remove pan and plastic wrap. Let dessert stand at room temperature 15 min. to soften slightly before cutting to serve.

- Combine water and sugar in a saucepan. Cook over medium high heat until the sugar comes to a boil and dissolves. Add mint leaves. Mix the leaves around. You can the leaves to get crushed and ugly so that all of the mint flavor goes into the simple syrup. Let the syrup cool.
- Meanwhile, boil a pot of water. About 2-3 cups. Let the tea steep in the hot water. White tea does not get very dark because it is well, white. This is after 3 minutes. Let the tea cool completely. Strain the mint leaves out of the syrup. Get your lime juice ready and reserve a few extra slices for garnish.
- Combine the simple syrup, tea mixture, lime slices, and some mint in a pitcher. Add sparkling water. This is more to taste. The more you add, the less sweet the mixture will be. I think that I added about 2 cups.
