MISHMISHIYAH

A creamy apricot sauce that can be served with many Near Eastern savory dishes. Goes particularly well with poultry.

Steps:

  • In a saucepan, simmer the apricots in a small amount of water (enough to barely cover.).
  • Add the lemon juice.
  • Cook until soft, and crush them with a fork.
  • Continue to simmer until it becomes a soft puree.
  • Stir in the heavy cream and cook for another 2 minutes, stirring constantly.
  • Serve hot or cold.

A delicious Syrian dish, be sure not to use Moroccan-style couscous, use the Lebanese or Israeli variety (which is larger). Serve with mishmishiyah (I will post the recipe soon).

Steps:

  • In a large pan (large enough to hold the chicken), fry the onion and garlic in the olive oil until onion becomes soft and translucent.
  • Put in the chicken and pour 4-1/2 cups of water (it won't be sufficient to cover). Add spices.
  • Cover and simmer for 1 - 1-1/2 hours so chicken is so tender it's falling off the bone, turning once halfway through.
  • Take out the chicken and remove skin and bones. Cut into small pieces.
  • Bring the sauce to a boil and add lemon juice.
  • Throw in the couscous. Cook for approximately 8 minutes (until tender). (you can add 1 cup of boiling water if necessary during this time)
  • Stir in the butter and place the chicken pieces back in the pan.
  • Heat through before serving.

  • Preheat the oven to 375 degrees Fahrenheit. Warm the oil in a large, oven-safe skillet (preferably stainless steel) over medium heat. Once shimmering, add the onion, bell pepper, and salt. Cook, stirring often, until the onions are tender and turning translucent, about 4 to 6 minutes.
  • Add the garlic, tomato paste, cumin, paprika and red pepper flakes. Cook, stirring constantly, until nice and fragrant, 1 to 2 minutes.
  • Pour in the crushed tomatoes with their juices and add the cilantro. Stir, and let the mixture come to a simmer. Reduce the heat as necessary to maintain a gentle simmer, and cook for 5 minutes to give the flavors time to meld.
  • Turn off the heat. Taste (careful, it’s hot), and add salt and pepper as necessary. Use the back of a spoon to make a well near the perimeter and crack the egg directly into it. Gently spoon a bit of the tomato mixture over the whites to help contain the egg. Repeat with the remaining 4 to 5 eggs, depending on how many you can fit. Sprinkle a little salt and pepper over the eggs.

Transfer to a large Dutch oven or other heavy pot (the larger the better, this bubbles vigorously) and add 1 bay leaf, 1 tsp. peppercorns, 1 tsp. turmeric, 1 tsp. salt, and 6 cups water.
  • Bring to a boil over high heat, then reduce heat to medium and cover pot. Cook, scraping down sides and giving mixture a stir 15 minutes in, until mung beans and rice are tender and mixture resembles a stew, 20–25 minutes. (If your pot lid is threatening to blow, feel free to crack it open slightly.) Remove from heat; taste and season with more salt if needed. Let sit, still covered, while you make the spiced ghee. (Alternatively, you can make this in an Instant Pot. Cook on rice setting on low-pressure 12 minutes and naturally release pressure.)
