FRESH MUSHROOM CASSEROLE

A perfect side dish to accompany a roast or grilled steaks or chicken. It doubles easily for extra dinner guests.

Steps:

  • Wash mushrooms and cut off stems.
  • Place in buttered 1 qt.
  • casserole.
  • Melt butter and bouillon cubes in hot water in small pan over medium heat, stirring to dissolve well.
  • Blend in flour, cream, salt and pepper.
  • Pour over mushrooms.
  • Mix bread crumbs and Parmesan cheese and add to mushrooms.
  • Bake uncovered at 350 degrees for 30 minutes.

1 lb fresh mushrooms, your favorite kind
1/4 cup butter
2 beef bouillon cubes
1/2 cup hot water
2 tablespoons flour
1/2 cup half-and-half
salt and pepper
1/2-1 cup parmesan cheese, grated
1/2 cup breadcrumbs

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat the olive oil in a large skillet over medium-high heat. Add the mushrooms, 1/2 teaspoon salt and a few grinds of pepper and cook, stirring occasionally, until the mushrooms are softened and have released most of their liquid, 7 to 8 minutes. Add the garlic and cook, stirring occasionally, until soft and fragrant, about 1 minute. Stir in the cream cheese and cook until melted and evenly coating the mushrooms. Stir in the mozzarella, 1/2 cup of the panko and 1/4 cup of the Parmesan until combined. Transfer to an 8-inch square baking dish.
  • Combine the parsley, butter and remaining 1/2 cup panko and 1/4 cup Parmesan in a medium bowl. Sprinkle over top of the mushrooms and bake until the breadcrumbs are light golden brown, 25 to 30 minutes.

4 ounces cream cheese, cut into pieces

Steps:

  • Combine grains in a mixing bowl and set aside.
  • Pour the oil into a 2 to 3 quart casserole which is safe for both stovetop and oven cooking, and place on medium heat.
  • When hot, saute onion and garlic until tender and translucent, about 5 to 6 minutes.
  • Add the mixed grains and saute for 1 minute, stirring constantly.
  • Meanwhile melt butter or margarine (if using) in a separate pan on medium high heat.
  • When hot, add mushrooms and saute quickly, stirring frequently, until the mushrooms are hot and have just absorbed the"butter" (about 1 minute).
  • Immediately remove from heat.
  • Add the broth, herbs, and mushrooms to the casserole with the onions and grains, and bring to a boil.
  • Season with salt and pepper to taste, cover tightly (use aluminum foil between pot and cover if necessary for a good seal), and bake at 350 degrees for 1 hour.

  • Preheat oven to 350F degrees. Rub a medium-large baking dish with a bit of olive oil or butter and set aside. The pan I use is slightly smaller than a classic 9x13 baking dish - just grab for something in this ballpark.
  • In a large skillet over medium-high heat saute the mushrooms in a glug of olive oil sprinkled with a couple pinches of salt. Stir every minute or so until the mushrooms have released their liquid and have browned a bit. Add the onions and cook for another 4 or 5 minutes or until they are translucent. Stir in the garlic, cook for another minute and remove from heat. Add the rice to the skillet and stir until combined.
  • Combine the rice mixture and cottage cheese mixture in a large bowl, stir until well combined and then turn out into your prepared baking dish. Sprinkle with 2/3 of the Parmesan cheese, cover with foil and place in oven for 30 minutes. Remove foil and bake for another 20 or 30 minutes more or hot throughout and golden along the edges. Sprinkle with the remaining Parmesan, and toasted almonds (and/or tarragon) and enjoy.
