MOCK BEEF TENDERLOIN

This recipe is easy, lean and delicious. What's better than that? We also use leftovers for another easy weeknight meal later in the week.

Mock Beef Tenderloin image

Steps:

  • Rub roast with tenderizer and/or seasoning.
  • Place on rack in broiler pan.
  • Cook in 425 F oven 45- 55 minutes for rare (remove when temp reads 135), 60- 65 minutes for medium (remove when temp reads 150).
  • Let rest 10 minutes before slicing into thin slices cut at an angle across the grain.

MOCK IN THE CROCK

"Mock Tender Steak/Roast" is usually anything but tender. This recipe will make it melt in your mouth! Any type of canned tomatoes will do, just break them up into small pieces.

Steps:

  • Trim away all outer fat from steaks and place in crock pot.
  • Blend together tomatoes, garlic and spices.
  • Dump on top of meat in crock pot. Throw in bay leaf.
  • Add just enough water to cover the meat.
  • Stir a bit to blend in water.
  • Cook on low for 6 to 8 hours.

2 -3 lbs mock tender steak
1 (14 1/2 ounce) can tomatoes
2 garlic cloves, minced or 1 teaspoon garlic powder
1 1/4 ounces Lipton Onion Soup Mix, dry
1 teaspoon celery salt
1/2 teaspoon fresh cracked pepper
1/2 tablespoon oregano
1 tablespoon parsley
1 large bay leaf

Steps:

  • Sprinkle the beef with seasoned salt and black pepper to taste. Heat the vegetable oil in a skillet over medium heat, and brown the roast on all sides, about 3 minutes per side. Place the browned roast into a slow cooker, and sprinkle the onion, chopped carrot, and celery over the meat. Scatter the potatoes and carrot pieces over the other ingredients, sprinkle on the Italian seasoning, parsley, and celery salt, and pour the can of soda over everything. Sprinkle the steak sauce on top.
  • Cover, and cook on Low setting for 8 hours.

Steps:

  • Stir together tomatoes, wine, soups, tomato sauce, garlic, Worcestershire sauce, mustard and pepper in bottom of 6- or 7-qt. slow cooker. Cut beef tenderloin in half; add to slow cooker, making sure to cover with sauce mixture. Cover and cook on low until meat is tender, 6-8 hours. If desired, top with chopped fresh parsley.
