MOIST AND DELICIOUS BANANA BREAD

This is the best banana bread I have ever had. I buy really ripe bananas just so I can make this :-) Got the recipe years ago from my friend Rachel. We used to beg her to make this for us in college! I think the moistness is due to the 1/2 cup of oil - I didn't say it was the healthiest banana bread around, but it is worth the extra time on the treadmill!

Steps:

  • Combine the oil, eggs, sugar, milk, vanilla, and mashed bananas.
  • Add the baking soda and flour.
  • Combine well for 2-3 minutes.
  • Pour into a greased loaf pan and bake in a preheated 325 degree F oven for 1 hour and 20 minutes.

3 ripe bananas, mashed
2 eggs
1 3/4 cups flour
1 1/2 cups sugar
1/2 cup vegetable oil
1/4 cup milk
1 teaspoon baking soda
1 teaspoon vanilla
1/4-1/2 cup walnuts (optional)

Moist Banana Bread With Coconut Oil from Chez Us image

Steps:

  • Preheat oven to 350.
  • Line a loaf pan with parchment paper (or butter and flour it).
  • In a large mixing bowl, sift the flour, baking soda, baking powder and salt. Set aside.
  • In a mixing bowl, beat the coconut oil on medium speed until soft (about 3 minutes). Add the cheese and continue beating on medium for about another 3 minutes.
  • Add the brown sugar and beat at medium speed until fluffy (about 5 minutes). Add the egg and bananas and mix until combined.
  • Add the dry ingredients and mix on medium speed for around 3 minutes until combined
  • Pour mixture into loaf pan.
  • Bake 45-55 minutes. The bread should be golden brown.
  • A knife or toothpick inserted in the middle will come out clean when the bread is done.

Steps:

  • In a bowl, combine butter and sugar; mix well. Add eggs and extracts; beat on high speed until thickened. Stir in bananas. Combine the flour, baking soda and salt; gradually add to banana mixture. Fold in the chocolate, coconut and pecans. Transfer to two greased 8x4-in. loaf pans. Bake at 350° for 70-75 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pans to wire racks.

  • Heat oven to 350ºF.
  • Combine flour, baking powder, baking soda and salt.
  • Whisk eggs, coconut oil and extract in large bowl until blended. Add sour cream and bananas; mix well. Add flour mixture; stir just until blended. Stir in nuts.
