MOM-MOM'S CHEESEBURGER CASSEROLE
This was a favorite of my Dad's, and I love it too! My Dad graduated to Heaven in 2005, so whenever I make this I think of him! Enjoy!

Steps:
- 1. NOTE: In place of the hamburger, green pepper & onion & seasonings, my Mom would sometimes use some leftover from "Mom-Mom's Hamburger Stew" (see recipe) It's delicious either way!
- 2. Brown the ground beef, & saute the pepper & onion with the seasonings until veggies are soft. Drain.
- 3. Cook the macaroni until al dente. Drain.
- 4. Spray a large casserole dish with cooking spray.
- 5. Add 1/2 of the macaroni, then 1/2 of the ground beef, then 1 can stewed tomatoes & then 1/2 of the shredded cheese.
- 6. Repeat layers, starting with macaroni and ending with cheese, adding a little more on top, if desired.
- 7. Bake in a 350 degree oven for 30-45 minutes, or until golden brown on top and bubbly.
- 8. ** This freezes well! I sometimes divide this recipe between two 8x8 square, or 9-inch round, disposable foil pans giving me one meal to freeze for later.
MOM'S CHEESEBURGER SURPRISE
My mom made these fairly often when I was growing up. They are easy, cheap, and customizable. Recipe is easily doubled and leftovers freeze well.

Steps:
- Preheat oven to 375*. Line baking sheet with parchment.
- Brown ground beef and onion in a skillet. Drain.
- If using a seamless Crescent sheet, cut dough into quarters. If using Crescent rolls, put two rolls together to form a rectangle.
- Lightly press dough to flatten and widen. Spoon 1/4 of the beef mixture onto dough, top with 1/4 of the cheese. Fold corners and sides up to form a packet. Place folded side down on parchment covered baking sheet. Repeat with remaining ingredients.
- Bake for 20 minutes, or until golden brown.
- I have substituted pie crust, pizza dough, and raw bread dough (like Rhodes rolls) will equal success. OPTIONAL: The meat filling may be changed with taco seasoning, cream of mushroom soup, or any ingredients of your choice.
CHEESEBURGER SURPRISE
In my kitchen, this recipe developed over ten years, each time I make it different than the last. (Easy to add or change ingredients without changing overall taste.) The secret is the breadcrumbs, adds that special something. Easy to cook, kids love it, and it's one of those foods that somehow tastes even better as leftovers.

- In large skillet, cook ground beef, onion, and green pepper together, adding garlic powder, salt and pepper to taste,until beef is brown and pepper is tender.
- Drain fat.
- Separately, cook Shells and Cheese as per package instructions.
- In microwave, melt butter (about 30-40 sec.).
- Add bread crumbs, stir until well coated.
- In med.

MOM'S LEGENDARY STUFFED HAMBURGERS
These are enormous, stick-to-your-ribs kind of burgers with a surprise in the center. A real family favorite. I like to serve them on a bun topped with sauteed mushrooms and Swiss cheese. Use extra lean or lean ground beef instead of medium because the bacon adds to the fat content of the meat.

Steps:
- Prepare a grill for medium heat. When hot, lightly oil the grate.
- Fry the bacon in a skillet over medium heat for about 5 minutes, stirring frequently. Add onions to the pan; cook and stir until bacon is browned, but not crisp and onion is soft. Remove from the pan and drain on a paper towel-lined plate. Season to taste with black pepper.
- In a large bowl, mix together the ground beef and onion soup mix. Divide into 8 balls and then flatten into thin patties. Place a quarter of the bacon mixture onto each of four patties. Top with the remaining patties and press the edges together to seal.
- Grill the burgers for about 15 minutes, turning once, until well done. Serve on buns with your favorite condiments.
