Steps:

  • In a large saute pan over medium-high heat, saute onion and garlic in olive oil until soft. Add tomato puree and tomato paste. Simmer, uncovered, for 20 minutes. Add lobster. After 5 minutes, add shrimp. After another 2 minutes, add calamari. The stew should be done in 2 minutes. Do not over cook calamari or it will toughen. Add basil and red pepper flakes. Serve over linguini and sprinkle with cheese.

1 small onion, diced
3 cloves garlic, minced
2 tablespoons olive oil
1 (28-ounce) can tomato puree
1 (6-ounce) can tomato paste
1 uncooked lobster tail, cut into 1-inch pieces
1 pound jumbo shrimp (about 22/pound), shelled and deveined
1 squid, cleaned and cut into 1-inch pieces
1 tablespoon freshly chopped basil
Pinch red pepper flakes
1 pound cooked linguini
1/4 cup freshly grated Parmigiano-Reggiano

MOM'S FAVOURITE SEAFOOD PASTA

This recipe is one of our favourite for company. I dedicate this one actually to my long time friend and pastor Jack, who was able to eat the 3 portions out of 4, and wipe the dish with bread to get to last bit of sauce. Ha,ha,ha!!! He LOVED IT... I'm sure you will too! Anyway I choose a narrow like spaghetty, linguine or sometimes if I have fettucine for this recipe.

Mom's Favourite Seafood Pasta image

Steps:

  • In skillet, combine wine, chicken stock, shallots, garlic, tomato, tomato paste and saffron.
  • Bring to simmer over medium heat and cook for 2 minutes.
  • Add fish, shrimp and scallops; cover and simmer for 3 minutes or until shrimp are pink and fish and scallops are opaque.
  • With slotted spoon, remove fish and seafood to bowl; set aside and keep warm.
  • Dissolve cornstarch in 1 Tbsp. of the cream and add to skillet along with remaining cream.
  • Cook, stirring, until boiling and thickened.
  • Return fish and seafood to skillet and stir to coat.
  • Season with salt and pepper to taste.
  • Spoon over pasta and sprinkle with parsley.

3/4 lb pasta, cooked
1/4 cup chopped fresh parsley

  • In a large 13 x 9-inch baking dish, stir together uncooked pasta, Alfredo sauce, chicken broth, wine, onion, garlic, and red peppers. Cover tightly with aluminum foil and bake for 45 minutes.
  • Remove dish from the oven and give it a stir. At this point you should check the pasta to make sure that it is al dente (firm but just about finished cooking). If it’s still too hard, cover the dish and return to the oven until pasta is al dente. Then move on to the next step.
  • Once pasta is al dente and the sauce has thickened, stir in the uncooked shrimp. Sprinkle mozzarella over the top. Bake uncovered for 5-10 more minutes (8 minutes was perfect for me).
