MOM'S COUNTRY GRAVY
This is my mother's recipe I grew up with. It is very tasty and is great with biscuits and sausage.

Steps:
- Heat the oil in a large skillet over medium heat. Whisk in the flour, salt and pepper until smooth. Cook and stir over medium heat until browned, about 10 minutes. Gradually stir in milk so that no lumps form, and continue cooking and stirring until thickened. If the gravy becomes too thick, you may thin it with a little more milk.

MOMS HAMBURGER GRAVY
Moms both make this. It is good over baked potatoes, mashed potatoes, wide egg noodles, toast, biscuits or waffles.

- Brown the hamburger.
- Remove the meat to bowl.
- Sprinkle flour into fat; brown the flour.
- Add the canned milk and enough water to make a gravy, stirring on low.
- Add hamburger back to gravy.
- Add salt and pepper to taste.
- Cook on low for a while (the longer you cook the better); 15 minutes is good.
- You can add dried beef if you want, cut in small pieces.
MOMS SOUTHERN TOMATO GRAVY
As kids we loved when mom made this gravy.She typically served it with corn bread,some type of green and fried ham.

- Melt butter and oil in skillet.
- Add flour and brown slowly.
- Do not burn and keep mixture spreadable.
- After browning ,remove from heat to cool.
- After cooling add tomatoes ,juices and water.
- Stir thoroughly.
- Return to heat stirring constantly untill mixture comes to a boil.
- Remove from heat,add salt , pepper and sugar.
- Stir and serve.

MOMS GIBLET GRAVY
this is just plain .everyone else had onions and what .not ours doesnt have that . this is how my grandma made it and my mothers both did

Steps:
- boil neck and giblets in water cook on low simmer cause you need fat from turkey to make gravy anyway
- you may need to add more water because meat has to come off the bone on the neck and gizzard must be tender so simmer about an hour at least.
- debone neck
- it just peels off when done
- and slice gizzards into small chunks
- i always eat the liver because im the only one that likes it lucky me lol. otherwise cut into small chunks too
- save to add to gravy.
- with fat from drippings cook flour salt and pepper in skillet until light brown make kinda a roux so the ratio of fat to flour is right this you have to stir so doesnt burn
- add stock from giblets
- and stir like crazy to get flour surrounded by water
- and neck meat and giblets
- and stir like crazy add canned milk.
- and simmer until as thick as you like.
- cook gravy on low cook for about 15 minutes.
- the longer you cook gravy the better
- gets rid of raw flour taste
- season the way you like.
- you have to stir every so often the thicker the gravy the more often you stir.
