MOM'S ITALIAN SPINACH

This brings the fondest of memories! This recipe was from my mother. I have been a spinach fanatic, as long as I can remember. My mother use to fix this dish below upon my request, which was several times a week. I could never get enough, and still this is my favorite way to eat spinach!

Mom's Italian Spinach image

Steps:

  • Heat a skillet over medium heat.
  • Add oil and garlic. Saute garlic in oil for a minute or two. Do not burn.
  • Add spinach to skillet. Toss well to combine. Continue to stir frequently so that all spinach becomes wilted.
  • Season with salt and pepper.
  • Pour mixture into serving dish, and top immediately with parmesan cheese.
  • Serve.

3 tablespoons extra virgin olive oil
3 garlic cloves, chopped
1 lb fresh washed spinach
salt & freshly ground black pepper
1/2 cup parmesan cheese, cheese- shredded

BEST EVER ITALIAN SPINACH

This is the best ever Italian Spinach. I believe it is very close to the recipe used by the Memphis resteraunt called Grisanti's. This recipe would also be VERY easy to double or triple. I hate eggs, and I love this recipe. My husband is not a huge 'green veggie' fan, and he loves this recipe. It is great, fast, easy, involves common ingredients, and will be a staple in your kitchen. I am going to try cooking in batches and putting in ziplocks to freeze (OAMC).

Best Ever Italian Spinach image

Steps:

  • Thaw spinach and squeeze out excess water.
  • Now, squeeze some more and set aside.
  • In a saute skillet, over medium heat, add olive oil and garlic.
  • Cook until garlic is golden brown (don't burn it!).
  • Add spinach and seasonings, saute for 3-4 minutes.
  • Break in eggs and continue to saute and stir until eggs are cooked and thoroughly mixed into the spinach.
  • Drain any excess oil and transfer to serving platter.
  • Sprinkle grated Paremesan cheese over the top, amount to your liking.

1 (10 ounce) box frozen chopped spinach
3 tablespoons olive oil
1 garlic clove, minced (I used 3)
1/4 teaspoon salt
2 eggs
fresh parmesan cheese (to garnish)

  • Cook pasta in a large pot of salted boiling water according to package instructions for al dente. Drain and set aside.
  • Meanwhile, in a large Dutch oven, heat the oil and butter over medium heat until the butter melts. Add the sausage and cook until browned, breaking up the large chunks with a wooden spoon – about 5-7 minutes. Add the garlic and cook, stirring constantly, for 30 seconds. Pour in the broth and wine, scraping any browned bits from the bottom of the pan. Let it bubble, then simmer until the liquid reduces by at least half, about 4 minutes. Fold in the spinach and toss gently, just until the spinach starts to wilt, about 1-2 minutes. Remove from the heat. Stir in the cooked pasta, cheese, and lemon zest. Taste and season with salt and red pepper flakes. Serve immediately and garnish with additional cheese and/or parsley.

  • Thaw frozen spinach in the microwave on defrost (spinach must still be raw.) Let the spinach drain in a colander in the sink.
  • While spinach is draining, prepare dough. In a large mixing bowl, use a pastry cutter to cut the butter into the flour until coarse crumbs appear.
  • In a small bowl, use a fork to beat the liquids together (5 tablespoons water, egg white & vinegar). Add a little of the liquid mixture to the dry ingredients and stir with a fork. Continue adding a little bit of liquid at a time and mixing. Press the butter into the flour with the fork. Add an extra tablespoon of water if needed.
  • Gather the dough into a ball and wrap it in plastic. Refrigerate the dough for 15 minutes and preheat the oven to 375 degrees.
