MOM'S MOLASSES HAM AND BEANS
This is a recipe my mom made frequently while I was growing up, but I tweaked it to include navy beans instead of lima beans. It's perfect for a cold day when you don't want to bother with lots of cooking. -Nancy Heishman, Las Vegas, Nevada

- In a greased 5-qt. slow cooker, combine all ingredients, except bacon. Cook, covered, on low 7-9 hours., Remove ham hocks. When cool enough to handle, remove meat from bones; discard bones. Cut meat into small cubes; return to slow cooker. Stir in crumbled bacon. If desired, serve with pickled jalapeno peppers and pickled red onions., Freeze option: Freeze cooled beans in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add a little water or broth if necessary.

- Cover dry beans in bowl with cold water and soak overnight (must be cooked the next day). Drain water from beans. Add 1 tsp baking soda to beans. Mix to coat. Allow to sit for approx. 15 minutes. Rinse thoroughly with cold water. This process helps to cook the beans faster. In large stockpot, saute onion in olive oil. Add 5 cups water to onions. Add beans to stockpot. Add all spices - except salt. Cook on medium heat for approx. 1 hour - checking regularly for liquid. If water is low and beans look dry - add water ¼ at a time. Add salt ¾ of the way through cooking. For Mom's Chili Bean Recipe: Ingredients: 1 lb. ground beef or turkey 1 - 7 oz can tomato sauce Directions: Cook ground beef in sauté pan. Drain liquid. Add meat and tomato sauce to beans when they are cooked ¾ of the way through (@ the same time that you are adding salt). Check for liquid content and spice flavoring. Add accordingly.
MOM'S HAM & BEANS
Mom would cook this all day and the aroma was so wonderful when we came into the house after work. She also had home made bread, hot out of the bread machine. Of course the bread would make any house smell good, but the experience of a hot meal after working out in the cold weather all day would make any one leap for JOY.

- 1. Prep Beans: Wash and clean beans. Fill pot 1/2 full of water and add beans. Bring to a boil and boil for 2 minutes. Remove from heat and let stand for 1 to 4 hours. Dump out water and drain beans.
- 2. Add ham bone to large pot. Cover with fresh water and bring to a boil. Simmer until meat falls off bone. Remove bone and skim off fat. Add drained beans, ham cubes and chopped onion. Bring to a boil and simmer for a few hours until beans are tender. You can add more or less ham/beans to desired pot size. Salt and pepper to taste. Serve with homemade bread. If you do not have a ham bone, just use left over ham and dripping from the bottom of the baking dish and skip the ham bone part.

- You do not need to soak the beans. Simply place the dry beans, onion, garlic, tomato paste and seasonings in the slow cooker. Add 7 cups of water and stir. Cover and cook on LOW for 8-10 hours, or until the beans are tender.

- Rinse the bag of beans well and remove any that look like they are past their prime. If unsure - chuck it.
- Pour the beans into a large bowl and cover with at least 2 inches of water and allow to soak overnight. Alternately, you can boil the beans at a steady boil for about 10 minutes before you begin to cook them. Whether you soak or parboil, pour the water off from this step.
- In a six quart stock pot on medium heat, heat the olive oil and saute the onion and garlic until they smell really good and the pieces become translucent.
- Remove the pot from the heat and add the beans, bacon, salt, chicken broth concentrate, one bay leaf and sugar and enough cool clean water to cover the beans by 2 inches. (If you are sensitive to salt, then you can always decrease the amount)
