TRADITIONAL POPCORN BALLS

- Place popcorn in a large baking pan; keep warm in a 200° oven. , In a heavy saucepan, combine the sugar, corn syrup, water and salt. Cook over medium heat until a candy thermometer reads 235° (soft-ball stage). , Remove from the heat. Add the butter, vanilla and food coloring if desired; stir until butter is melted. Immediately pour over popcorn and stir until evenly coated. , When mixture is cool enough to handle, quickly shape into 3-in. balls, dipping hands in cold water to prevent sticking.

MOM'S CHRISTMAS POPCORN BALLS
Got this one from my mom; my brother and I got these every year in our Christmas stockings. Mom would also wrap them in colored Saran wrap and put in gift baskets and tins to give to friends.

Steps:
- In a medium saucepan, mix together sugar, water, corn syrup, salt, and vinegar.
- Bring to a boil over medium heat until mixture reaches hardball stage (250 degrees) Remove from heat and add 1/2 tsp vanilla and the crushed candy canes.
- Pour mixture over the popcorn in a slow steady stream, then mix thoroughly.
- Shape into balls (about the size of a baseball works well) and put on wax paper to harden.
- Enjoy!

- In a medium saucepan, mix all ingredients except the vanilla.
- Cook until mixture reaches 270 degrees, or brittle ball. (approx. 10-15 min over medium high heat)
- Take off heat and stir in vanilla.
- Pour over the popcorn, and stir lightly and quickly to coat. Shape quickly with butter coated hands (important - the butter keeps the syrup from sticking to and burning your hands). Note: If desired, food coloring can be added before cooking.
