OATMEAL PANCAKES
These hearty oatmeal pancakes with cinnamon and nutmeg hit all the breakfast cravings when paired with yogurt and strawberries.

Steps:
- Combine the flour, oats, sugar, baking powder, cinnamon, nutmeg and salt in a blender; blend until the oats are finely ground. Add the milk, butter and egg and blend until smooth, scraping down the sides of the blender occasionally.
- Heat a nonstick skillet over medium-low heat and lightly brush with butter. Spoon about 1 tablespoon of batter per pancake into the skillet, leaving space between the pancakes for spreading. Cook until bubbles appear on the tops of the pancakes and the bottoms are golden brown, about 2 minutes. Flip and cook until cooked through, about 1 minute more. Repeat with the remaining batter, brushing the skillet with additional butter as needed.
- Serve the pancakes with a dollop of yogurt and sliced strawberries.
MORADA FARMS OATMEAL PANCAKES
Christin Cooper (1984 Silver Medal Olympic Winner in alpine skiing) says the recipe can be adjusted using stone-ground whole wheat flour and hearty oats for big ski days or white flour and quick oats for mellower mornings by the wood stove. I wanted to make a heartier pancake that didn't taste like cake this morning, and the texture reminds me of cottage cheese pancakes. The oil in the recipe is completely optional. Little or no oil is needed for cooking. The batter is runnier than a traditional batter, but they fluff up during cooking. If the batter sits too long, the oats will continue to absorb the milk and you may have to add more milk (my batter didn't sit, but this is Christin's suggestion). I added a splash of vinegar to the milk to make buttermilk because I didn't have yogurt. Next time I make these I think I'll add a little vanilla and maybe some cinnamon for fun. - Soak oats in a cup of boiling water or hot tap water with a tablespoon of brown sugar.
- Beat in the egg.
- Add yogurt or buttermilk, milk, flour, baking powder, and oil (if desired, little or no oil is needed for cooking).
- Cook on a fiery hot griddle. When bubbles start to form, it's time to flip to the other side.

- Preheat oven to 425°. In a large skillet, cook beef and onion over medium heat until beef is no longer pink, breaking up beef into crumbles, 5-7 minutes; drain. Stir in cream cheese, preserves, carrot and seasonings. Cool slightly., On a lightly floured work surface, unroll sheets of pie crust. Cut 40 circles with a floured 3-in. cookie cutter, rerolling crust as necessary. Place half of the circles 2 in. apart on parchment-lined baking sheets. Top each with 1 rounded tablespoon beef mixture. Top with remaining crust circles; press edges with a fork to seal., Brush tops with egg yolk; sprinkle with sesame seeds. Cut slits in tops. Bake until golden brown, 12-15 minutes. Remove from pan to a wire rack., Meanwhile, in a microwave, warm sauce ingredients, stirring to combine. Serve with empanadas. Freeze option: Cover and freeze unbaked empanadas on waxed paper-lined baking sheets until firm. Transfer to a freezer container; return to freezer. To use, bake empanadas as directed, increasing time as necessary. Prepare sauce as directed.

QUICK OATMEAL PANCAKES
My husband used to not like pancakes and absolutely hate pancake syrup until I had him try the oatmeal pancake with mango or blueberry sauce. Now he regularly asks me to make some for breakfast. Serve warm with your favorite syrup or sauce.

- Place 1 cup milk in a microwave-safe bowl; heat in microwave until bubbling, about 2 minutes. Stir in the oats.
- Mix flour, brown sugar, baking powder, salt, and cinnamon together in a bowl. Whisk eggs, 2 teaspoons melted butter, and vanilla extract together in a separate bowl; add 1/4 cup milk. Mix oat mixture and egg mixture with flour mixture; stir to combine.
