APPLESAUCE CAKE
Applesauce makes this cake exceptionally moist. It's delicious on its own or served with a scoop of vanilla ice cream. If you decide to use store-bought applesauce, choose one with a chunky texture.

- Preheat oven to 350 degrees. In a large bowl, whisk together flour, baking soda, salt, cinnamon, and cardamom. Set aside.
- In another bowl, with an electric mixer, beat butter, brown sugar, and honey until light and fluffy. Add eggs, one at a time, beating until combined. With mixer on low speed, gradually add flour mixture; beat just until combined. Beat in applesauce.
- Generously coat a nonstick 9-inch tube pan with cooking spray. Spoon batter into pan; smooth top. Bake until a toothpick inserted in the middle comes out clean (but slightly wet), 50 to 60 minutes.
- Cool on a wire rack 10 minutes. Turn out of pan onto a cutting board or baking sheet; invert cake onto rack, top side up. Cool completely. Dust with confectioners' sugar before serving, if desired.

- Cream butter or margarine with sugar. Add applesauce; beat well. Stir in flour, soda, and spices. Add nuts and raisins.
- Pour the batter into a greased and floured 8 inch square pan. Bake at 350 degrees F (175 degrees C) for 40 minutes, or until done. Serve warm.

- Place raisins and hot water in a small bowl; set aside. , In a large bowl, cream shortening and sugar until light and fluffy. Beat in egg. Combine the flour, baking soda, salt and spices; add to creamed mixture alternately with applesauce and water. Drain raisins; fold into batter with the walnuts. , Transfer to a greased 13x9-in. baking pan. Bake at 300° for 40 minutes or until a toothpick inserted in the center comes out clean. Place pan on a wire rack. Dust with confectioners' sugar if desired. Serve warm or cold.

MOM'S APPLESAUCE CAKE
My Mom got this recipe from a little German lady at Lake Quinault, WA, right after WWII. It was a constant in our house, when I was growing up, as it was my Dad's favorite! Mom served it unfrosted, as it was so nice and moist! Do not overbake, to prevent it becoming too dry.

Steps:
- Cream together butter and sugar.
- Add eggs and mix well,
- Sift together flour, cinnamon, cloves and baking soda, and add in to butter/sugar mixture. (It will be thick, like cookie dough.)
- Mix in raisins and nuts, and hot applesauce (I heat in small saucepan on stove, but microwave should work, also). Hot applesauce will thin down the dough into a batter.
- Pour into a 9" x13" baking pan (sprayed with Baker's Joy, or greased and floured)
- Bake at 350* for 45 to 50 minutes, until toothpick comes out clean. Start checking at 40 minutes. Cake is best if slightly underdone.
- Serve plain, dusted with powdered sugar, or frost with cream cheese icing. I grew up eating it plain.
MOTHER'S APPLESAUCE CAKE
Great memories of this cake; it smells incredible when it's baking. Makes a great snack cake without frosting!

- Sift dry ingredients. Drop in: 1/2 cup shortening. Mix. Add 2/3 of 1 1/2 cups unsweetened applesauce. Beat. Add eggs. Add remaining applesauce.
- Fold in raisins & nuts. Pour into greased rube or rectangle pan. Sprinkle top with sugar.
- Bake at 350 degrees 35-45 minutes, until inserted toothpick comes out dry.
