MOZZARELLA CHICKEN
This is a great change from the usual chicken.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Place chicken breasts between 2 sheets of wax paper. Pound each to 1/4 inch thickness. Spread butter/margarine over the inside, then add salt and pepper to taste.
- Place slice of cheese on breast, roll and close with toothpicks. Repeat with each breast. Dip rolled breasts in flour, then egg, then breadcrumbs. Place coated breasts in a lightly greased 9x13 inch baking dish.
- To Make Sauce: In a saucepan, melt 1/4 cup butter and add garlic. Add wine and simmer all together. Pour sauce over chicken and bake in the preheated oven for 30 to 45 minutes.

MOZZARELLA HOT SAUCE CHICKEN
Easy and very addicting! I received this recipe from my good friends, Brad & Sandy, who are in Texas. This I loved so much I made 4 times in a row!!! They suggest using Frank's Hot Sauce but I've made it only with regular tabasco (I add extra) and it works great... Enjoy!

Steps:
- Preheat oven to 350 degrees.
- Melt butter on medium low heat in large skillet.
- Add tabasco sauce.
- Add chicken and cook until done.
- Reduce heat to low and simmer until sauce reduces a bit.
- Place chicken in baking dish including the sauce.
- Sprinkle with parmesan cheese.
- Cover with mozzarella cheese.
- Place uncovered in oven for 20-25 minutes or until cheese is browned.

- Preheat oven to 400°. Pound chicken with a meat mallet to 1/2-in. thickness. Place bread crumbs in a shallow bowl. Add chicken, a few pieces at a time, and turn to coat. Steps:
- Dip chicken breasts in eggs and dredge in bread crumbs on both sides.
- Saute breasts in olive oil, set aside.
- Saute mushrooms in melted butter and add broth and wine to mushrooms and bring to a boil.
- Put chicken breasts in baking dish.
- Pour wine sauce and mushrooms over chicken.
- Marinate overnight in refrigerator or if baked immediately you may want to thicken sauce with flour.
- Bake chicken at 350 degress for 35-40 minutes.
- Sprinkle cheese over chicken 5 minutes before chicken is done, until melted.
- Serve with rice or noodles.

- Heat oil in a large skillet over medium high heat. Saute chicken breasts for 4 to 5 minutes each side, or until white. Add pepper, garlic, onion and broth. Cover and simmer over medium heat until broth cooks off, about 7 to 10 minutes.
- Stir in spaghetti sauce, then cover and simmer another 10 minutes, or until chicken is cooked through and no longer pink inside. Sprinkle cheese on top, cover and cook for another 2 to 3 minutes, or until cheese is melted. Serve hot.

- Preheat oven to about 350.
- Mix garlic, ginger, and olive oil in a skillet until garlic starts to brown.
- Brown chicken breasts and transfer to baking pan.
- Put chicken in the oven while making the sauce.
- Turn down burner to medium heat. Add chicken stock, thyme, and salt to pan. Mix in all the remaining garlic and ginger bits. Add milk and cream cheese. Allow the cream cheese to melt and whisk well to mix everything. Add mozzarella, mix well, and let sit until everything melts together and sauce turns into a "big goopy mess".
- Pour onto chicken breasts. Put them back in the oven for about 20-30 minutes or until internal temp is correct.
- Excellent with a 'plain' side dish such as brown rice, some noodles, or even just a spinach bedding.

- Mix the garlic powder, salt, and pepper together and season each side of each chicken breast with it evenly.
- Heat oil in a large skillet over medium high heat. When oil is hot, place chicken breast in a single layer in the skillet. Cook chicken in batches if the skillet is too crowded.
- Cook chicken 3-4 minutes on each side allowing it to brown before flipping. Then remove chicken from skillet and set aside.
- Add garlic to the skillet and stir for 30 seconds to flash cook. Then pour the tomatoes over the garlic and add the Italian seasoning. Reduce heat to medium and allow to come to a simmer for 5 minutes, stirring and scraping the pan to release any bits from the bottom.

- CHICKEN: Sprinkle the chicken with a pinch of salt and pepper on both sides. Heat a large nonstick skillet over medium-high heat with the olive oil. Add the chicken to the skillet and cook for about 3-5 minutes per side or until the chicken is completely cooked through, remove to a plate. If you are planning on serving this with pasta, get the water going and cook the pasta according to package directions.
- TOMATO SAUCE: Preheat the oven on the broiler setting. Add the onions to the oil remaining in the pan. If there isn't any, add in about ½ teaspoon and sauté the onion for 2-3 minutes until they soften, add the garlic and let cook for 30 seconds. Add the crushed tomatoes, Italian seasoning, red pepper flakes, dried basil, and pesto and stir to combine. When the sauce reaches a simmer, add a ¼ cup of water, lower the heat, cover and allow to simmer for 10-12 minutes or until the sauce thickens a bit. Season with salt and pepper to taste.
- ASSEMBLE: Nestle the chicken breasts into the sauce and using a spoon, cover the chicken with sauce. Top each breast with a slice of cheese. Place under the broiler for 1-2 minutes or until the cheese gets nice and bubbly and just melts. Top with chopped parsley or basil ribbons. Serve with pasta or crusty bread and a salad.
