I created this olive salad recipe after a vacation to New Orleans. Muffaletta sandwiches are fabulously addictive! Sometimes I will assemble the sandwiches and broil them open faced until the meat is crisped and the cheese melted and toasty. Enjoy!

- Place the black olives, green olives, artichoke hearts with their juice, and onion into a food processor. Pour in the vinegar and olive oil, and season with garlic, celery seed, oregano, basil and black pepper. Cover, and process until finely chopped. Use as a condiment on sandwiches, or a dip for crackers. Refrigerate leftovers.

- In a large bowl, combine the first 14 ingredients. Cover and refrigerate at least 8 hours. , Cut bread in half horizontally; carefully hollow out top and bottom, leaving a 1-in. shell (discard removed bread or save for another use). Spoon half the olive mixture over bottom half of bread. Layer with salami, ham, mortadella, Swiss and provolone; top with remaining olive mixture. Replace bread top. Wrap tightly. Refrigerate at least 3 hours or overnight. Cut into 8 wedges.

REAL N'AWLINS MUFFULETTA
These gigantic sandwiches were invented a century ago at Sicilian Deli here in New Orleans. The spicy, tangy olive salad is what really sets this meat and cheese sandwich apart. A genuine muffuletta should be made on oven-fresh Italian bread topped with sesame seeds. Be sure and use the highest-quality ingredients available; it really makes a difference! Since you're going to all the trouble of making the olive salad, consider doubling the recipe so you'll have some extra waiting around for when you get another muffuletta craving -- it keeps for at least a month! Note: Use round bread loaves for real muffuletta.

- To Make Olive Salad: In a medium bowl, combine the green olives, kalamata olives, garlic, cauliflower, capers, celery, carrot, pepperoncini, cocktail onions, celery seed, oregano, basil, black pepper, vinegar, olive oil and canola oil. Mix together and transfer mixture into a glass jar (or other nonreactive container). If needed, pour in more oil to cover. Cover jar or container and refrigerate at least overnight.
- To Make Sandwiches: Cut loaves of bread in half horizontally; hollow out some of the excess bread to make room for filling. Spread each piece of bread with equal amounts olive salad, including oil. Layer 'bottom half' of each loaf with 1/2 of the salami, ham, mortadella, mozzarella and Provolone. Replace 'top half' on each loaf and cut sandwich into quarters.
- Serve immediately, or wrap tightly and refrigerate for a few hours; this will allow for the flavors to mingle and the olive salad to soak into the bread.

MUFFALETTA SALAD

- In a food processor, combine the garlic, vinegar, extra-virgin olive oil, olive juice, lemon juice, red chili flakes, pepper and all vegetables up to the red onion. Pulse until well chopped but not pureed. Transfer to a bowl, cover with plastic wrap, place into refrigerator and let marinate for 2 to 4 hours.
- Add orzo to marinated vegetables, toss, then add feta and toss again.
- Serve in lettuce cups and top with tomatoes.

- Prepare the pasta in salted water boiling 8 minutes until al dente.
- Drain Pasta and put in a shallow bowl.
- Add to the pasta the jar of Olive Mix (if you can't find Muffulata mix a mixture of crushed olives and finely chopped giardinara in oil will suffice).
- Add other ingredients and incoroporate well with a spoon until mixed.
- if too dry you can add a cup or so of homemade red wine vinaigrette until the salad moist enough for your taste.
- Cover and refrigerate overnight for best flavor.
- Serve as a side dish with italian bread sticks for garnish.

This salad has everything in the filling of a muffaletta sandwich but in pasta salad form! It is a great salad to take on a picnic and it has a nice variation of tastes on the tongue in each bite! It is one of our summer picnic staples!

- Bring a large pot of lightly salted water to a boil. Cook the rotini in boiling water until tender yet firm to the bite, about 8 minutes; drain. Rinse pasta with cold water until chilled; drain.
- Mix carrots, pepperoncini, Genoa salami, Cheddar cheese, provolone cheese, sweet onion, green olives, Kalamata olives, pepperoni, celery, green bell pepper, red bell pepper, and artichoke hearts together in a large mixing bowl. Pour Italian-style salad dressing over the salad and toss to coat; add pasta and stir.

- Drain all the water from the olives and the peppers.
- In a large bowl, combine the green olive slices, olive oil, vinegar, garlic, salt and spices.
- In another large bowl, combine the peppers and kalamata olives.
- Stir both bowls thoroughly.
- Pulse the peppers and kalamata olives in a food processor or Robot Coupe until roughly chopped.
- Combine the pulsed olives and peppers with the green olives and oil. Mix thoroughly.
- Transfer all contents into canning jars and seal according to safe canning procedures.
- Makes a bunch of olive salad, but when you live too far from New Orleans to buy it and the cost is $90 for 4-quarts of the Original from Central Grocery -- you make it. BTW, this recipe uses real olive oil like they used in the old days. Now it's canola oil in the store-bought versions.
- I'm not a fan of giardiniera so this recipe is missing it. I did replace it with Peppadew peppers and loved the result. If you'd like to use giardiniera, just replace the amount of peppadew peppers used.

MEMPHIS MUFFULETTA
New Orleans is one of our favorite "kick back" vacation destinations. We go there for the people, the food, the music, and the overall vibe. New Orleans is second only to Memphis in vibeness. We also go there for the sandwiches, and always make a point of digging into one of their most famous, the muffuletta, every time we visit. It's a killer sandwich, made with spicy Italian meats, cheeses, and a knockout marinated olive salad, the aroma of which is so powerful that when you're waiting in line it'll cause you to salivate! Our Memphis Muffuletta has bayou roots for sure. We start with a large round Italian loaf with a sturdy texture, so it can hold up to the delicious mix of ingredients. The meats and cheeses vary, but our favorite is a muffuletta with salami, hot soppressata, mortadella, smoked turkey, Swiss, and aged provolone. Our Memphis kicker is the addition of smoky piquillo peppers from Spain. They infuse the piquant olive salad with an incredible flavor. When it comes to cheese, we go for two flavorful varieties-an imported Swiss and an aged provolone. We call this our backyard sandwich, because it's actually best if you assemble it in advance and allow it to marinate for about 30 minutes on the cutting board. Then you can cut the big loaf into eight wedges and have dinner on the patio. In New Orleans tradition, serve this sandwich with a cold Abita beer and some spicy Zapp's potato chips.

- Whisk together the mayonnaise, olive oil, vinegar, honey, lemon juice, red-pepper flakes, oregano, and 1 teaspoon black pepper in a large bowl. Add the onion, carrot, olives, artichoke hearts, peppers, celery, and parsley; toss, and season to taste with salt and black pepper. Cover with plastic, and allow the salad to marinate in the refrigerator for at least 1 hour.
- Slice the bread in half, and pull some of the interior from the middle of the roll to make room for the other ingredients. Spread a generous amount of the olive oil salad on each half (you will probably have some salad left; it holds for 2 or 3 days in the refrigerator).
- Layer the meat and cheese on the bottom half, alternating layers of each meat with thin layers of cheese. Cover with the top half of bread, press gently, slice into wedges, and serve.
