MUSHROOM STROGANOFF WITH SPINACH
I have regularly prepared this dish for over a quarter of a century. I want so much to say that it is mine; but, alas, I cannot. The recipe came from an International Vegetarian Cookbook. We do a "no-no" and add ground sirloin to it.

Steps:
- Remove stem and root ends from onion; cut in half lengthwise and thinly slice onion lengthwise so that it falls into slivers.
- Add butter in a deep, wide frying pan over medium heat. Add onion and garlic, and cook, stirring often, until onion begins to soften. Mix in paprika and nutmeg and cook, stirring, until onion is soft but not browned. Stir in mushrooms and cook, stirring occasionally, until liquid evaporates and mushrooms are lightly browned (10 to 15 minutes).
- Add stock and bring to a boil over high heat. Reduce heat to medium and continue boiling gently until liquid is reduced by about a third (5 to 8 more minutes). Mix in spinach and stir just until wilted. Blend in sour cream, Worcestershire, and hot pepper seasoning. Season to taste with salt. Cook, stirring, just until heated through - do not boil. Serve over brown rice or pasta of your choice.

COCONUT CREAMED SPINACH
Mellow, silky, and melt-in-your mouth tasty, this coconut creamed spinach is a definite crowd pleaser.

Steps:
- Heat olive oil in a large skillet over medium heat. Add the mushrooms, shallot, and garlic and cook, stirring occasionally, until soft and fragrant, about 3 minutes.
- Gradually add spinach by handfuls, stirring until it wilts. Continue until all the spinach is in the skillet, about 5 minutes.
- Gradually pour in coconut milk and vinegar and bring to a simmer. Simmer until mixture thickens, 4 to 5 minutes.
- Season with salt, pepper, and a sprinkle of freshly ground nutmeg. Serve immediately.

STROGANOFF CASSEROLE WITH A TWIST
Delicious layers of seasoned ground beef, mushroom soup, sour cream, mushrooms, spinach, and saltines topped with Muenster or any melty cheese! Fantastic!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Rub butter all over a 2-quart baking dish.
- Heat a large skillet over medium heat. Add ground beef, pepper, onion powder, and salt; cook and stir until browned, 5 to 8 minutes.
- Mix cream of mushroom soup and sour cream together in a bowl.
- Lay 6 saltine crackers in the bottom of the prepared baking dish. Top with 1/2 the ground beef. Dollop 1/3 of the mushroom soup mixture over beef. Lay remaining saltines on top. Cover with spinach and another 1/3 of the mushroom soup mixture. Spread remaining ground beef and mushroom soup mixture on top. Cover with mushrooms.
- Bake in the preheated oven until bubbly, about 30 minutes. Top with Muenster cheese and continue baking until cheese is melted, about 5 minutes more.

After looking at other Mushroom resipes for Stroganoff, I've combined several to my tastes. Hope you like it too.

Steps:
- In 10" skillet, heat oil over medium high heat, add onion and mushrooms, cook 10 minutes, stirring occasionally. Add garlic, cooking 1 min additional, stirring occasionally. Reduce heat to medium, stir in tomato paste. Stir in spinach; cook 1 to 2 minutes or until spinach is wilted. Gently stir in sour cream, milk, salt and pepper. Cook just until hot, stirring occasionally. Remove from heat. Serve of noodles of choice.
