MUSTARD GLAZED PORK WITH APPLE CAESAR SALAD

A fresh and healthy twist on the Caesar salad with flavourful mustard glazed pork

Mustard glazed pork with apple Caesar salad image

Steps:

  • Brush the pork with 2 tsp of the mustard and set aside. In a large bowl, mix all the remaining ingredients, except the lettuce, with some seasoning. Top with the leaves but don't mix together yet.
  • Griddle or grill the pork for 3-4 mins on each side, until cooked through and golden, then allow to rest for 1 min. Slice the pork then toss with the salad and dressing, combining everything well.

4 lean pork escalopes or loin steaks, trimmed of any fat
1 tbsp Dijon mustard
1 tbsp extra-virgin olive oil
juice ¼ lemon
1 tsp Worcestershire sauce
3 tbsp low-fat natural yogurt
50g parmesan cheese, finely grated
2 apples , unpeeled, cored and thinly sliced
2 baby romaine lettuces (about 300g/11oz), leaves separated and large ones roughly torn

Steps:

  • Rub the pork steaks with a little oil and season with pepper and salt to taste. Heat a large frying pan and fry the steaks for 2 mins on both sides until golden. Transfer to a plate. Adding a little more oil to the pan, fry the apples, onions and sage for 5 mins or until the apples have softened.
  • Pour in the stock and spoon in the mustard, then return the pork to the pan and simmer for 10 mins until the sauce has reduced by about a third and the pork is cooked through. Serve with veg and mashed potatoes.

I couldn't find a single Caesar salad recipe I liked, so I combined ingredients from a few recipes and came up with this one. The addition of fruit gives this salad such a wonderful flavor.

Steps:

  • For croutons, combine 1/4 cup oil, 2-3 garlic cloves and 1/4 teaspoon salt in a bowl; let stand for 1 hour. Strain oil and discard garlic. Toss bread cubes in the oil; place on a baking sheet. Bake at 400° for 7-9 minutes or until golden brown, stirring occasionally. Cool., In a small bowl, combine the lemon juice, mustard, Worcestershire sauce, pepper and remaining oil and salt. Mince remaining garlic; stir into dressing. , Place romaine in a salad bowl; drizzle with dressing. Add the croutons, Parmesan cheese and apple; toss to coat.
