ITALIAN THREE-CHEESE MACARONI

- Cook macaroni according to package directions., Meanwhile, preheat oven to 350°. In a small saucepan, melt butter. Stir in flour, Italian seasoning, salt and pepper until smooth; gradually add milk. Bring to a boil; cook and stir 2 minutes or until thickened. Remove from the heat; stir in cheddar and Parmesan cheeses until melted. Drain macaroni., Spread 1 cup cheese sauce in a greased 13x9-in. baking pan. Layer with half of macaroni, tomatoes and cheese sauce. Repeat layers. Sprinkle with mozzarella cheese. Combine bread crumbs and butter; sprinkle over top., Cover and bake 40 minutes. Uncover and bake 10-15 minutes longer or until golden brown and bubbly. Let stand 5 minutes before serving.

ITALIAN MAC-N-CHEESE

- Bring a large pot of water to a boil. Salt water and cook pasta to a chewy al dente, about 8 minutes.
- In a nonstick skillet, brown and crumble the sausage. Drain cooked crumbles on paper towel lined plate. Return pan to heat and add extra-virgin olive oil, butter, garlic and mushrooms. Season liberally with salt and pepper. Saute 3 to 5 minutes, until mushrooms are lightly golden.
- Preheat broiler to high.
- To mushrooms, add flour and stir, cooking 2 minutes. Whisk in stock, then stir in cream. Bring cream to a bubble, then stir in 2 cups of 4 cheese blend. When cheese has melted into sauce, add tomatoes. When sauce comes to a bubble, remove from heat and adjust seasonings, adding hot sauce if desired.
- Combine cheese sauce with sausage and pasta, transfer to flameproof baking dish, casserole or flameproof serving platter. Sprinkle remaining 1/2 cup of 4 cheese blend and the grated Parmesan over the top and brown under hot broiler.
GRANDMA NANCY'S MANICOTTI

- Preheat oven to 350 degrees F.
- In a medium bowl combine the ricotta, 1 cup of the grated cheese, eggs, and pepper.
- Fill each crepe with approximately 1/4 cup of the cheese mixture centering it in a straight line down the middle. Top with the shredded mozzarella. Take one end of the crepe and fold over the cheese filling. Then take the other end and pulling slightly, fold over in a wrapping motion overlapping the stuffed portion of the crepe. Repeat until all 12 crepes are filled.
- Spread one cup of the sauce in the bottom of a large baking pan that has been sprayed with a non-stick cooking spray. Place the filled manicotti in the pan, seam down, side-by-side. Do not overlap, and do not layer them. Spoon the remaining sauce over the manicotti. Be sure to cover all the pasta. Sprinkle with the remaining grated cheese. Cover with foil and bake at 350 degrees F for approximately 30 minutes or until the sauce is hot and bubbling.
- Remove from the oven and let stand for approximately 10 to 15 minutes before serving. This will give the manicotti time to settle which will make for easy serving. The manicotti will fall apart if served immediately.
- In a pan heat the olive oil. Add onions and cook until translucent. Add garlic and cook for a few minutes on medium heat. Do not let garlic burn. Add tomatoes, basil, oregano, and pepper. Let tomato mixture cook for approximately 30 minutes.
NANNY'S SIMPLE MACARONI AND CHEESE
Gosh, there are so many Mac and Cheese recipes! I looked at many before deciding to post my favorite recipe from childhood. My grandmother makes this all of the time. My girls and I love it but the Hubby doesn't like it much. "Too bland" he says. Great comfort food!

- Boil pasta according to package in salted water.
- For firmer pasta reduce boiling time by a few minutes.
- Drain.
- Grease a deep casserole dish (I use a spray).
- Place a layer of macaroni, enough to cover the bottom, in the casserole dish.
- Add a layer of cheese slices covering the macaroni.
- Very lightly season with salt and pepper (I actually skip this and we add salt and pepper to taste on our individual servings).
- Repeat these layers until you are out of pasta.
- Pour milk over the casserole until the milk almost reaches the top of the casserole dish (It doesn't take much because the dish is already full of pasta and cheese).
- Bake covered for about 45 minutes to an hour in a 350 degree oven.
- You'll know it is finished cooking when the milk is no longer liquid.
- Sometimes I add leftover ham chunks to the layers.

MAWMA NANCY'S MAC AND CHEESE
I make this dish for any big family gathering. I have a granddaughter who always ask for this at our holiday gatherings. This make a big amount. My recipe was also featured in a cook book by Gooseberry Patch. It was in "Sunday Dinner At Grandma's". I was very pleased as i received a copy of this cookbook.

- In a large bowl,combine cooked macaroni,butter,milk,mozzarella cheese,3 cups of the cheddar cheese, salt and pepper. Stir in eggs.
- Pour into a lightly greased 3 qt. casserole dish. Cover with aluminum foil and bake at 350 degrees for 45 minutes. Uncover and sprinkle reserved cheddar cheese on top. Bake, uncovered, for an additional 15 minutes additional, or untill cheese melts.

- Meanwhile, melt 2 tablespoons of the butter in a large oven-safe skillet. Add the flour (2 tablespoons) and stir to coat in the butter, and continue to cook, stirring, for about 1 minute. - When pasta is done cooking, drain it or use a slotted spoon to transfer it over to the cheese sauce. Stir to coat. It will seem really thick- don't worry, it will thin out as the pasta and any water clinging to it settles in.
