SPAGHETTI ALLA CARBONARA

Spaghetti alla Carbonara image

Steps:

  • Fill a large pot with 6 quarts of water and add the salt. Bring the water to a boil.
  • Fry the guanciale in a skillet until crispy; do not drain the fat drippings. Set aside.
  • In a large bowl, beat the whole eggs with the Pecorino Romano cheese for 1 minute. Then add the freshly ground black pepper.
  • At this point your water should be boiling. Add your pasta and cook it for 8 to 9 minutes or according to the instructions on the box (or if using fresh pasta, cook for 4 to 5 minutes). When the pasta is cooked al dente (chewy and firm), drain the pasta well, add the pasta to the bowl with the mixture of eggs and cheese, mix quickly and then finally add the guanciale with all the fat drippings. Stir quickly for a few more minutes and serve in hot bowls.
  • Heap the flour into a pile on a wood or marble countertop. Make a large well or crater in the center, big enough to the hold the eggs like a bowl. Break the eggs in the center and knead for about 10 minutes, pausing after 5 minutes in order to let the dough relax. Wrap the dough in plastic wrap, and let it rest in the refrigerator for at least 2 hours. After the time, or you can roll out some sheets with a pasta sheet roller and cutter or cut with a knife.

Steps:

  • First, warm your serving dishes in a low oven or in the microwave. Heat the oil gently in a large, shallow pan. Fry the guanciale or pancetta and garlic for 10 mins, or until all the fat has rendered off and the meat is golden and crisp. Remove and discard the garlic clove, then turn off the heat.
  • Bring a large pan of salted water to a simmer and cook the pasta until it's al dente (about a minute less than the pack instructions). Meanwhile, whisk 2 egg yolks in a small bowl with a pinch of salt.
  • Using kitchen tongs, lift the pasta from the water into the pancetta pan along with any dripping water. Use a wooden spoon to stir it into the rendered fat. If the pan looks dry, add a small ladleful of pasta water and mix it in. Keep adding until you see a little pasta water at the bottom of the pan - you'll be surprised how much will be absorbed.
  • Working quickly, tip the beaten yolks in with the pasta and stir vigorously. Rinse the yolk bowl out with a little more pasta water and pour that in too. Add most of the parmesan and beat again. If at any time it's becoming claggy or starting to scramble, pour in a little more water. If you've added too much, stir the pasta over the lowest heat for a few moments. You're aiming for a smooth sauce that is the consistency of double cream. Season with a couple of pinches of ground black pepper and taste for salt.
  • Transfer the pasta to the warmed serving dishes, scatter over the remaining parmesan and nestle the last two egg yolks on top, if using. Season them with some salt and pepper, and drizzle over the truffle oil, if you have it, just before serving.

SPAGHETTI CARBONARA

The secret to carbonara is timing and heat - the latter of which you need very little. To be successful, have all your ingredients ready at the same time that the pasta is ready. Once you drain it, toss everything together off the heat (emphasis on off the heat) and the hot pasta will provide just enough warmth to cook the eggs through and make a beautiful silky sauce. It's when you try to mix everything together over the heat that you end up with scrambled egg spaghetti.

Steps:

  • Place a large pot of salted water over high heat and bring it to a boil. Place a medium skillet over medium heat with the bacon. Gently cook the bacon, stirring occasionally, until crispy, 8 to 10 minutes. Remove the bacon from the skillet and drain it on a paper towel. Reserve the drippings in the pan.
  • When the bacon is just about ready, drop the pasta into the boiling water and cook to al dente according to package directions. When the pasta is ready, reserve about 1/2 cup of the pasta water before draining it.
  • In a large mixing bowl whisk together the egg yolks, whole egg, cream and pepper. Reserve until the pasta is ready.
  • Drain the cooked pasta well and add it to the reserved egg mixture along with about 1/4 cup of the reserved pasta water and 1 tablespoon of drippings from the bacon. Immediately begin tossing the pasta to evenly coat it with the egg mixture. While continuing to toss the pasta constantly, add the cheese in two additions (along with some more of the reserved pasta water if the mixture looks dry). Add in the reserved bacon. After tossing the pasta for about 30 seconds total, the mixture will come together as a silky sauce.
  • Serve the pasta immediately garnished with the parsley, if desired.
