I eat oatmeal 3 or 4 times a week and find myself looking for new ways to add flavor and interest without adding a lot of calories. This morning's experiment was worth sharing. Feel free to adjust to your dietary and taste preferences.

- Boil water in a small sauce pan, then add oatmeal, almond extract, and diced apricots.
- Cook oatmeal 5-10 minutes until done according to your taste.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet.
- In a large bowl, blend the applesauce, brown sugar, and honey. In a separate bowl, sift together the whole wheat flour, all-purpose flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Blend the flour mixture into the applesauce mixture. Fold in the oats, vanilla extract, almond extract, apricots, almonds, and cranberries. Drop the batter by rounded teaspoonfuls onto the prepared baking sheet.
- Bake 12 to 15 minutes in the preheated oven, until golden brown. Cool on wire racks.

Super healthy and deliciously soft high-fiber snack made with chia seeds, ground flax, unsweetened coconut, and oatmeal. Almond butter adds protein. I use raw honey in these.

- Combine oats, almond butter, chocolate chips, honey, chia seeds, ground flax seeds, and coconut in a stand mixer fitted with the paddle attachment. Beat together, gradually increasing speed, until mixture no longer sticks to the center of the paddle.
- Shape mixture into 1-inch balls with your hands. Place on a baking sheet lined with parchment paper.
- Freeze balls until firm, about 30 minutes. Transfer to an airtight container and store in the refrigerator.

- Preheat oven to 180°C/350°F/Gas Mark 4. Grease a 9 x 9-inch baking pan and line with parchment paper (nonstick cooking paper) so that the ends are sticking out. (This will make it easier to transfer the baked oat slice slab to a cooling rack later).
- Combine the unsalted butter and honey in a microwave safe measuring cup or bowl. Heat in 30 second increments, stirring with a spoon in between, until melted.
- Combine the old fashioned rolled oats, wholewheat flour (wholemeal wheat flour), brown sugar, desiccated coconut, dried apricots, almonds, and baking soda. Mix with a large spoon or rubber spatula until evenly combined.
- Pour in the melted unsalted butter and honey into the bowl with the dry ingredients, and add the almond extract, ground cinnamon, and water. Mix with a spoon until evenly combined, then spoon into the prepared baking pan. Flatten the mixture using the back of the spoon or rubber spatula.
