Oatmeal Cake image

Steps:

  • 1. Preheat oven at 350 degrees. Pour boiling water over oatmeal and set aside for 20 minutes.
  • 2. Cream butter and sugars. Add eggs. Beat well.
  • 3. Add vanilla and oatmeal mixture.
  • 4. Add flour, baking soda, salt, cinnamon, and nutmeg. Mix well.
  • 5. Pour into a greased 9x13 inch pan.
  • 6. Bake for 30 minutes.
  • 7. For Topping: Melt butter. Add coconut, nuts, brown sugar, and milk.
  • 8. Mix well.
  • 9. Frost cake when you take it out of the oven.
  • 10. Broil until the top is brown. Watch it carefully so it doesn't burn.

1 1/4 c water, boiling
1 c oatmeal, old-fashioned, uncooked
1/2 c butter
1 c sugar
1 c brown sugar, firmly packed
2 eggs
1 tsp vanilla
1 1/2 c all-purpose flour
1 tsp baking soda
3/4 tsp cinnamon
1/2 tsp salt
1/4 tsp nutmeg
TOPPING
1/2 c butter
2 c coconut
1 c nuts (finely chopped)
1 1/2 c brown sugar, firmly packed
8-10 Tbsp evaporated milk

Steps:

  • Pour boiling water over oats; cover and let stand 20 min. Beat margarine till creamy, gradually add sugars and beat until fluffy. Blend in vanilla and eggs. Add oats mixture and mix well. Sift together flour, soda, salt, cinnamon and nutmeg. Add to creamed mixture. Mix well. Put in well greased and floured 9 inch square pan. Bake 350 for 50 - 55 min. Do not remove cake from pan. For frosting, combine the butter and brown sugar, milk, nuts and and coconut. Spread evenly over cake. Broil until frosting becomes bubbly.

Steps:

  • Place oats in a small bowl; add boiling water. Let stand for 20 minutes. , In a small bowl, cream shortening and sugars. Add oat mixture and egg; mix well. Combine the flour, baking soda, cinnamon and salt; add to creamed mixture and beat until combined. , Pour into an 8-in. fluted tube pan coated with cooking spray. Bake at 350° for 22-27 minutes or until a toothpick inserted in the center comes out clean. Cool for 15 minutes before removing from pan to a wire rack to cool completely. Dust with confectioners' sugar if desired.

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9 x 13 pan.
  • In a small bowl, pour boiling water over oats. Mix well, and cool.
  • In a large bowl, combine butter or margarine, 1 cup brown sugar, 1 cup white sugar, eggs, flour, baking soda, spices, and salt. Add cooled oatmeal mixture, and stir to combine. Pour batter into pan.
  • Bake for 35 minutes.
  • While cake is baking, combine 1/2 cup white sugar, 1/4 cup brown sugar, coconut, melted butter or margarine, vanilla, and cream in a mixing bowl. Remove cake from oven, and turn on broiler. Grandma Snyder's Oatmeal Cake image

Steps:

  • Pour water over oats, let stand.
  • Cream 1/2 cup butter or margarine and sugars. Add eggs and blend in a large mixing bowl. Sift the flour, baking soda, salt, cinnamon and nutmeg together. Add to sugars and egg mixture. Add vanilla and oats mixture, blend well.
  • Pour batter into a 9 x 13 inch pan.
  • Bake in a preheated 350 degrees F (175 degrees C) oven for 30-40 minutes.
  • To Make Icing: Mix together 6 tablespoons melted butter, 1 1/2 cups brown sugar, 3/4 cup evaporated milk, coconuts, nuts, and 1 teaspoon vanilla.
  • Pour this coconut concoction over the hot cake.
  • Put cake under broiler, and watch close so nuts don't burn, about 5-10 minutes. Serve hot or let cool. Enjoy.
