- In bread machine pan, place the milk, 2 tablespoons butter, vanilla, brown sugar, salt, flours and yeast in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available., Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed)., Just before the final kneading (your machine may audibly signal this), add oats and nuts. Brush baked loaf with remaining butter.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
- In a large bowl, cream together the shortening and sugar until light and fluffy. Stir in the eggs one at a time, beating well with each addition, then stir in the banana and vanilla.
- In a separate bowl, sift together flour, baking soda and salt. Beat into creamed mixture. Stir in oats and nuts. Pour into prepared pan.
- Bake in preheated oven for 50 to 55 minutes, or until a toothpick inserted into the center of the loaf comes out clean.

Steps:
- In a small bowl, combine the boiling water, butter, salt and sugar. Stir in oats; cool to lukewarm. In a large bowl, dissolve yeast in warm water. Stir in the molasses, brown sugar and 1 cup flour. Beat until smooth. Stir in oat mixture and enough remaining flour to make a stiff dough. , Turn out onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1-1/2 hours. , Punch dough down. Turn onto a lightly floured surface; divide in half. Shape each portion into a ball. Cover and let rest for 10 minutes; Shape into loaves. Place in 2 greased 9x5-in. loaf pans. Cover and let rise until nearly doubled, about 1 hour. , Bake at 375° for 30-35 minutes (cover loosely with foil if top browns too quickly). Remove from pans to wire racks to cool.

Steps:
- In a large bowl, combine the oats, honey, butter and salt.
- Add the 2 cups boiling water, and stir well.
- Let mixture set until cooled, then add 2 cups of the flour. Stir well.
- Dissolve the yeast in the 1/4 cup warm water, and let set for 10 minutes.
- Add yeast to the oat mixture, mixing until combined.
- Stir in the 1 cup nuts.
- Work in the remaining 2 cups flour. Knead for 8-10 minutes.
- Place dough in a large greased bowl, cover and let rise for 1 1/2 hours.
- Punch dough down and shape into two loaves. Place dough into two 8 1/2" x 4 1/2" greased loaf pans.
- Cover and let rise 1 hour.
- Bake at 375 degrees for 40-45 minutes.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan and set aside.
- Cream together the shortening and sugar. Add eggs and vanilla; beat until fluffy.

- Combine baking soda with the boiling water. Soak the dates in the water and baking soda solution for 30 minutes.
- Cream sugar and butter together. Add eggs, vanilla, dates, nuts, flour, and salt.

OATMEAL, FRUIT AND NUT BREAD
This is a tasty bread with very little fat-virtually none if you use the nonfat buttermilk and leave out the nuts. I've only made it with raisins, but I'll bet it would be really good with the dried cranberries also.

Steps:
- Combine oats and buttermilk; mix well and set aside for a few minutes.
- Combine dry ingredients, except for the sugar, and mix well.
- Add brown sugar to oat mixture and mix well, pressing out any lumps.
- Add buttermilk mixture and vanilla to dry ingredients and stir just until dry ingredients are moistened.
- Stir in fruit and nuts (if using).
- Put batter into 2 1-lb loaf pans that have been sprayed with nonstick spray.
- Bake at 325 for 25-30 minutes.
- Cool in pan for 5-10 minutes, then remove from pans to cool on wire rack.

- To make the overnight soaker: In a mixing bowl, combine the oats and water. Stir thoroughly, cover, and let sit overnight (8 to 12 hours) at room temperature.
- To make the dough: Weigh your flour; or measure it by gently spooning it into a cup, then sweeping off any excess. In a large bowl or the bowl of your stand mixer, combine the overnight soaker with the remaining dough ingredients. Mix and knead to make a soft, elastic dough; if the dough seems dry, knead in an additional 1 to 2 tablespoons (14g to 28g) water. If you're using a stand mixer with dough hook, the mixing/kneading process will take about 3 minutes on low speed followed by 5 to 6 minutes on medium speed.

- Add oats and butter to the bowl of a stand mixer or large mixing bowl. Heat milk to a simmer and pour on top, stirring to combine. Set aside for about 1.5 hours. Mixture should be at room temperature.
- Add honey, warm water, instant yeast, and salt to the bowl and stir well to combine. Add the whole wheat flour and mix on medium-low speed until combined. Add the all-purpose flour, a little at a time, until the dough begins to pull away from the sides of the bowl. Only add enough flour to make a dough that is soft, and not overly sticky (don’t add too much flour!). Knead for a few minutes until smooth and elastic and scrape down the sides and bottom of the bowl as needed.
- First Rise: Transfer dough to a greased bowl and cover with a dish towel or plastic wrap. Allow to rise until double in size, about 1 hour.
- Punch down the dough and divide into two equal pieces. Shape into loaves and place in two lightly greased loaf pans. Make egg wash and gently brush some over the top of each loaf. Sprinkle a small handful of dry oats on top.
