OATMEAL RAISIN CHEESECAKE CRUMBLE

Convenient refrigerated cookies form the delicious crust for rich and creamy dessert squares. Recipe is one of the 100 finalists in the 2010 Pillsbury Bake-Off contest, submitted by Maurice Chinn - and my favorite!

Oatmeal Raisin Cheesecake Crumble image

Steps:

  • Heat oven to 350°F In bottom of ungreased 13x9-inch pan, press cookie dough rounds evenly for crust. Sprinkle with 1 cup of the pecans; press firmly into dough. Bake 13 to 17 minutes or until golden brown.
  • Meanwhile, in large bowl, beat cream cheese with electric mixer on medium speed until smooth. Add milk, vanilla and eggs; beat until well blended. On low speed, beat in 1/2 cup of the flour. Pour over crust; spread evenly.
  • In medium bowl, mix brown sugar and remaining 1/2 cup flour. Cut in butter, using pastry blender or fork, until mixture looks like coarse crumbs. Stir in cinnamon chips, raisins, oats and remaining 1 cup pecans. Sprinkle over cheese mixture.
  • Bake 35 to 45 minutes longer or until set. Cool completely, about 2 hours. To serve, cut into 4 rows by 4 rows. Store in refrigerator.

2 cups chopped pecans
2 (8 ounce) packages cream cheese, softened
1 (14 ounce) can sweetened condensed milk
1 teaspoon vanilla
2 eggs
1 cup all-purpose flour
3/4 cup packed light brown sugar
1/2 cup cold butter
3/4 cup hershey's cinnamon baking chips
1 cup raisins
1/2 cup old fashioned oats or 1/2 cup quick-cooking oats

Winning Recipe Oatmeal-Raisin Cupcakes, Orange Cream Cheese Icing image

Steps:

  • Preheat the oven to 375 degrees F. Line standard cupcake pans with 36 cupcake liners.
  • Whisk 2 cups oats with the flour, oat bran, baking soda, baking powder, salt, and cinnamon in a medium bowl. In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and both sugars on medium-high speed until pale and fluffy. Add the eggs, 1 at a time, beating until each is smooth, scraping down the sides of the bowl if needed. Beat in the vanilla. Turn the speed to low, add the flour mixture, and beat until combined. Beat in the sour cream. Stir in the raisins by hand. Transfer 2 3/4 cups batter to a small bowl, and then stir the coconut and the remaining 1 3/4 cups oats. Divide the plain batter among the cupcake liners, and then top each with 1 tablespoon oat-coconut batter. Bake until golden, rotating the pans halfway though, 18 to 20 minutes. Transfer the pans to wire racks to cool completely before removing the cupcakes.
  • To assemble: Frost the cooled cupcakes with Orange Cream Cheese Icing.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat the cream cheese, butter, and salt on medium-high speed until creamy. Turn the speed to low and beat in the confectioners' sugar, 1/2 cup at a time. Increase the speed to medium-high and beat until light and fluffy. Add the orange zest and liqueur, beating steadily until mixed. Refrigerate the frosting for 30 to 60 minutes to firm.;

1/2 cup unsalted butter, room temperature
Pinch salt
2 1/2 cups confectioners' sugar, sifted
2 teaspoons grated orange zest
2 teaspoons orange flavored liqueur or extract

Steps:

  • Preheat oven to 375 degrees, rack in the middle position.
  • Add sugar to the melted butter and mix. Mix in the salt and baking soda.
  • When the mixture has cooled to room temperature, mix in the eggs. Add the flour and stir it inches Add the raisins to the mix.
  • Prepare your oatmeal. Measure 2 cups and dump into a food processor, Chopping with the steel blade until it is the consistency of coarse sand. Dump it into your dough and mix. The dough will be fairly stiff.
  • Roll walnut sized balls with your hands and place them on a greased cookie sheet, 12 to a standard cookie sheet. If the dough is too sticky to roll, place the bowl in the refrigerator for 30 minutes and try again. Squish the dough balls down with a fork in a crisscross pattern.
  • Bake for 10 minutes. Cool on cookie sheet for 2 minutes and then remove to wire rack to cool completely.

Oatmeal Raisin Cookie Cheesecake image

Steps:

  • 1. Crust: Mix graham cracker crumbs or oatmeal raisin crumbs, sugar and butter; press firmly on bottom of 9 inch spring form pan. Bake at 350 degrees for 10 minutes. Set aside.
  • 2. Bake cookies as directed on package for 16 minutes at 350 degrees. Cool 10 minutes. Crumble cookies into very small pieces or crush oatmeal raisin cookies.
  • 3. In a large bowl, beat cream cheese, sour cream and sugar until smooth, (medium speed of mixer), about 3 minutes.
  • 4. Beat in eggs, one at a time, just until blended.
  • 5. On low speed, beat in flour, vanilla and salt; blend well, about 2 minutes. Pour batter evenly into crust. Fold in crumbled cookies. or you can layer cookies by spooning 1/3 filling, then 1/2 crushed cookies. Sprinkle with cinnamon-sugar mixture. Add the last bit of filling and finish the top of cake with cookie crumbs and more cinnamon-sugar mixture.
  • 6. Bake 1 hour to 1 hour 10 minutes or until almost set. Cool completely on rack, about 1 hour. Refrigerate at least 6 hours or overnight. Baking in a water bath prevents cracking.
  • 7. Just before serving, top with whipped cream.

1 c graham cracker crumbs or 1-1/2 cups oatmeal raisin cookie crumbs
3 Tbsp sugar or 2 tbsps. brown sugar with oatmeal raisin crumbs

3 pkg (8 ounces each) cream cheese, softened
1 (8 ounce) container sour cream
1 c sugar

3 Tbsp flour
1 tsp vanilla
1/8 tsp salt
1 tsp ground cinnamon mixed with 1/4 cup sugar
