OLD-FASHIONED MACARONI AND CHEESE
Bring back the taste of days gone by with this ooey-gooey mac-and-cheese classic. A little ground mustard and hot pepper sauce give it just the right spice. -James Backman, Centralia, Washington

Steps:
- Preheat oven to 350 degrees F. Meanwhile, melt 4 tablespoons of the butter in a non-reactive saucepan. When bubbly whisk in flour and cook for a couple of minutes, stirring every now and then. Slowly whisk in the milk and bring to a boil. Reduce heat to low and simmer, whisking on occasion for 3 to 4 minutes. Remove pan from heat and whisk in grated cheese. Stir vigorously just until cheese has melted. Then whisk in heavy cream to adjust the texture and season to taste with salt and cayenne pepper. In a mixing bowl combine sauce with sun dried tomatoes and drained macaroni and adjust seasoning. Transfer mixture to a 13 x 9-inch baking pan and spread it out evenly. Sprinkle bread crumbs on top and dot with remaining 4 tablespoons of butter. Bake until hot and bubbly, about 30 minutes. Let stand 5 minutes before serving.

Most requested recipe for me to bring to a potluck or family reunion. I received it from my husband's aunt in the 1960s and has since been my favorite dish. The recipe may be halved for a 9 x 9 inch baking dish.

OLD FASHIONED MAC AND CHEESE
This is the macaroni I grew up on. Nothing is added to it like meat or soup etc. I like a creamy sharp cheesy taste like my mom made. The secret ingredient is what makes this the best I've tasted.

Steps:
- 1. Boil elbows in highly salted water. Drain. While elbows are boiling, in large saucepan, heat butter and cheese until melted. Add 4 cups buttermilk, dry mustard and eggs. Heat until thoroughly melted and blended. Add to drained elbows. Stir together. Pepper to taste. Add more buttermilk to just the top of elbows. Put 4 or 5 slices of American Cheese on top. Bake uncovered in a 350 degree preheated oven for 55 minutes or until hot and bubbly.
- 2. NOTE: Even if you hate buttermilk you will love this. The buttermilk just gives it that sharp pungent taste that you crave in macaroni and cheese dishes.
