APPLE ONION SAUCE FOR PORK
This is excellent served with a pork roast or pork chops. Sometimes I add a little mustard to it as well. You can prepare this the day before and reheat it.

Steps:
- Melt butter in a skillet, medium high heat.
- Add apples and onions, cook until glossy 3-4 minutes.
- Add sugar& salt.
- Reduce heat to very low cover& cook until almost tender, 30 min, stir frequently.
- Stir in the Sherry.
- Continue cooking until the mixture is very soft.
- Transfer to food processor and mix doing on/off.
- Do not over process.
- Serve while hot.

Steps:
- Turn your oven up to 350°F.
- While your oven is heating, peel and core and slice your apples.
- Finely slice your onions.
- Add the sliced apples to an oven proof dish.
- Add the onions.
- Drizzle the maple syrup over the apples and onion mixture.
- Sprinkle with cinnamon and nutmeg.
- Mix all together.
- Cover the dish.
- Bake for approximately 30 - 40 minutes.
- The apples and onions will be very soft when cooked.
- Serve with pork chops or pork roast.
- Delicious !

- In a large cast-iron or other heavy skillet, saute onions in butter until tender. Place apples on top of onions. Combine remaining ingredients; sprinkle over apples. , Cover and simmer for 10 minutes. Uncover and simmer until apples are tender, 5 minutes longer. Serve with a slotted spoon.

Steps:
- Combine apples, water, 2 tablespoons sugar and cloves in heavy medium saucepan. Stir over medium-low heat until sugar dissolves. Cover; cook until apples are tender, about 12 minutes. Discard cloves. Using fork, coarsely mash apple mixture. Taste, adding more sugar if desired. Simmer until thickened, stirring occasionally, about 5 minutes.
- Melt 4 tablespoons butter in medium skillet over medium heat. Add onion; saute until golden, about 10 minutes. Season with salt and pepper. Set aside.
- Melt 2 tablespoons butter in large skillet over medium-high heat. Season pork with salt and pepper. Add to skillet; saute until brown and cooked through, about 8 minutes per side. Transfer to platter; tent with foil. Add both stocks and sage to skillet; bring to boil, scraping up any browned bits. Boil juices until reduced to 1/3 cup, about 10 minutes.
- Meanwhile, rewarm onion mixture, stirring occasionally. Rewarm applesauce, stirring occasionally.
- Divide onion among plates. Top with pork. Spoon pan juices over pork and serve with applesauce alongside.

- Cut bacon in inch squares and fry out.
- Remove bacon.
- Reserve grease.
- Clean the fry pan.
- Add 1 tablespoon of bacon fat to hot fry pan and add onions.
- Brown the onions until golden and translucent.
- Add more fat if needed.
- Add apples and cook until tender.
- Taste, if mixture is a bit sharp, add brown sugar.
- Pour apples/onions into a hot baking dish.
- Top w/ crumbled bacon.
- Cover& keep warm in oven until serving time.
