GRILLED CHEESE, BACON AND JALAPEñO SANDWICHES
We grilled up a spicier version of the traditional grilled cheese sandwich by adding a chopped jalapeño chile and bacon slices to sharp cheddar. They're ready to bite into in just 25 minutes.

- In 8-inch skillet, cook bacon over medium-high heat until crisp. Remove from skillet to paper towel. Add chile to bacon drippings in skillet; cook and stir 1 to 2 minutes. Place chile on paper towel.
- Spread butter on both sides of each slice of bread. Top each of 4 bread slices with layer of cheese, chopped chile, 2 slices of bacon and another layer of cheese. Cover each with second slice of bread.
- Heat 12-inch nonstick skillet over medium-high heat. Cook sandwiches until bread is browned and cheese begins to melt. Turn sandwiches; cook until cheese is completely melted.

- Bring a large piece of parchment paper or foil to the stove. Heat a medium (10-inch) nonstick skillet over medium. Grease the skillet generously with butter. Place one side of the roll in the skillet, cut-side down, and toast until golden, 2 to 4 minutes. Transfer the toasted half to the parchment, cut-side up. Repeat with more butter and the other half of the roll. (The second side will take less time, as the pan gets hotter.)
- If you're using beef or turkey bacon, add 1 tablespoon butter to the skillet. Add the bacon and cook over medium until browned and crisp, 2 to 4 minutes per side. As the bacon cooks, press it down with a spatula. (This helps the fat render, producing crunchier bacon.) Turn off the heat and transfer the bacon to the bottom roll. Pour off all but 1 tablespoon of the fat.
- Pour the eggs into the skillet, season with salt and pepper and set over medium-low. Using a spatula, pull the egg toward the center and tilt the skillet so the egg runs to the empty part of the skillet. Repeat this all around until the surface of the egg is no longer runny but still shiny. Add the cheese on the top, tearing into smaller pieces for even coverage. Cook, undisturbed, until the top of the egg is matte, just a minute. Remove from heat, fold the egg in half, and then in half again. Transfer to the bottom roll.
- Add ketchup and hot sauce as desired, then add the top roll and press down. Wrap in the parchment, smush again, and let sit for a couple minutes for all the elements to steam together. Cut in half and eat.

- Line a baking sheet with aluminum foil. Arrange bacon slices in a single layer. Place the baking sheet of bacon into a cold oven; set the temperature to 375 degrees F. Bake the bacon for about 15 to 20 minutes, depending on the thickness. Transfer the bacon to paper towels to cool and drain.
- Slice the Gouda cheese into ⅛ to ¼-inch slices; core and cut the apple into thin slices or use a mandolin to about the same thickness. Divide the bacon, cheese, and apples placing equal amounts between 2 slices bread. Starting with cheese and ending with cheese.
- In a large nonstick sauté pan add ½ tablespoon of the butter over medium heat. Warm the butter until it begins to foam. Add the sandwiches on top of the butter. Add the remaining ½ tablespoon of butter to the pan; flip the sandwiches over onto the butter. Cook until golden brown and the cheese has melted, about 3 to 5 minutes on each side. You may need to reduce the heat to low to keep the bread from browning too much. Adding a lid will help melt the cheese faster if the sandwiches start to get to brown.
- Carefully transfer the grilled cheese sandwiches to a cutting board. Carefully open them up and smear about a tablespoon of the jelly onto each sandwich. Cut the sandwiches in half and serve immediately with your favorite soup of chips.
