GRILLED BBQ BACON SHRIMP

Steps:
- Preheat grill to medium.
- Soak skewers in water while preparing the BBQ sauce. In a medium saucepan melt butter and saute onions and jalapeno, until tender. Season with cayenne, and salt and pepper. Add ginger, brown sugar, orange juice and ketchup in that order making sure to blend each ingredient completely before adding the next ingredient. Let simmer until the edges begin to caramelize, about 15 minutes. Set aside and let cool. Once cool, remove half of the sauce and reserve for dipping. The other half is for brushing on the shrimp when grilling. Cut bacon in thirds. Thread each shrimp onto a skewer, starting from the tail end. Bend the shrimp as you thread it so it lies in 1 straight line on the skewer, removing its natural curve. Wrap the center of each shrimp with a piece of bacon. Brush with BBQ sauce and place skewers with bacon, seam side down, onto the grill. Cook over medium heat until bacon crisps and shrimp is cooked through, about 8 minutes.
BACON WRAPPED BARBEQUE SHRIMP
These are spicy and wonderful! As close as I can get to a restaurant version that I am addicted to. Serves 2 as an entree and 4 as an appetizer.

- Wrap shrimp with 1/2 slice of bacon, securing with a toothpick. Be sure and use the large shrimp--the cooking time for the shrimp and the bacon is similar. If you use medium-sized shrimp, you might want to precook the bacon a little--over cooked shrimp are tough and rubbery--and a real shame.
- Preheat the oven to 450 degrees F (230 degrees C).
- Line a jelly roll pan with extra heavy duty foil, and place baking rack in the pan. Place the shrimp on the rack, and sprinkle heavily with the barbecue seasoning. Turn and sprinkle second side. Set aside for 15 minutes. The bacon will turn from creamy white to a little opaque, and the seasonings will soak in.
- Bake in the preheated oven until bacon is crisp and shrimp are tender, 10 to 15 minutes. The rack keeps the shrimp from sitting in the draining bacon fat. With a little luck, you won't tear the foil--you can throw that away and only have to scrub the rack.

BLACKENED SHRIMP WRAP WITH BBQ BACON AND CAJUN REMOULADE

- For the shrimp: Heat a grill to medium-high heat. Combine the paprika, garlic, onion powder, sugar, salt, coriander, black pepper and cayenne in a bowl. Melt the butter in small saucepan over medium-low heat. Add the spice mixture and cook until fragrant, stirring frequently, about 3 minutes. Let cool, then toss the shrimp with the butter and spices and let sit for 15 minutes.
- Lay the bacon across grates of a grill and grill until crisp, 2 to 3 minutes per side. Set aside on paper-towel-lined plate.
- Grill the shrimp until charred, 1 to 2 minutes per side. Let rest, then chop each shrimp into 3 smaller chunks.
- For the remoulade: Mix together the mayonnaise, capers, hot sauce, lemon juice, mustard, parsley, relish and garlic in a bowl and season with salt and black pepper.
- Mix together the avocados, tomatoes and orange juice. Season with salt and black pepper. Schmear a tablespoon of remoulade on each tortilla and top with avocado and tomatoes, 2 slices of bacon and some grilled shrimp. Tightly wrap and serve with extra remoulade for dipping.
BACON-WRAPPED SHRIMP

- Position a rack 3 to 4 inches from the heat source and preheat the broiler. Whisk the lemon juice, garlic, paprika, thyme, olive oil and 1/2 teaspoon salt in a shallow baking dish. Add the shrimp and toss to coat; marinate in the refrigerator, 20 minutes.
- Turn the shrimp in the marinade to coat well. One at a time, remove each shrimp and wrap with a piece of bacon; secure with a toothpick if desired. Place seam-side down on a baking sheet. Spoon any remaining marinade over the shrimp. Broil, turning the shrimp once, until the bacon is slightly crisp and the shrimp are cooked through, about 5 minutes.
BACON-WRAPPED SHRIMP WITH CHIPOTLE BARBECUE SAUCE
Steps:
- Soak 5 to 8 bamboo skewers in water for about 20 minutes to keep them from burning on the grill or under the broiler.
- Meanwhile, cook the bacon in a large skillet until halfway done, about 4 minutes. Drain and cool on paper towels. Wrap a piece of bacon around the middle of each shrimp; skewer with bamboo through the point where the bacon ends meet to keep it from unraveling. Thread 3 to 5 shrimp on each bamboo skewer.
- Puree the barbecue sauce, oil, lemon juice, mustard, chipotles, red pepper flakes, cayenne pepper and 1/4 teaspoon freshly ground pepper in a blender. Set aside half of the sauce for dipping.
- Preheat a grill, grill pan or broiler. Grill or broil shrimp (on a foil-lined baking sheet, if broiling) for 5 minutes, basting with the sauce once they begin to turn pink. Flip, baste again and grill or broil until just cooked through, about 4 more minutes. Serve with extra sauce.
SHRIMPIN' PIMPIN' BACON-WRAPPED SHRIMP
Steps:
- In a large bowl, combine the BBQ sauce, chipotles, mandarin orange syrup, mustard, Worcestershire sauce and lemon juice. Sprinkle the shrimp with salt and pepper and add to the marinade. Toss the shrimp to coat and let sit 5 minutes.
- Heat a grill or grill pan over medium-high heat.
- Remove the shrimp from the marinade and wrap each with a slice of bacon. Grill the shrimp until the bacon and shrimp are cooked, 2 to 3 minutes on each side.

- Cut each bacon strip in half widthwise; set aside. Wrap a basil leaf around each shrimp. Wrap a piece of bacon around each; secure with wooden toothpicks. , Place in a foil-lined 15x10x1-in. baking pan. ORANGE BBQ SHRIMP WRAPPED IN BACON
Steps:
- Sauce: Combine first 11 ingredients and place in a heavy bottomed saucepan. Cover and simmer for 20 minutes; 40 minutes longer for more depth of flavor (can be made day before). Preheat broiler and line a baking sheet with aluminum foil. In a large skillet over medium heat cook bacon until fat is translucent and bacon is still limp. Drain on paper towels and cut each strip in half crosswise. Wrap each shrimp with one piece of bacon. Secure bacon with a toothpick and place on a wire rack. Place the rack on the prepared tray and broil the shrimp until the bacon starts to crisp. Turn the shrimp over and broil the other side. Now set the oven temperature to 500 degrees F. baste both sides of the shrimp with BBQ sauce and place in the oven for 2 mintes. Turn the shrimp over and return to the oven for 3 to 6 minutes longer or until the shrimp are pink and opaque. Serve over basmati rice spiked with grated lemon zest and parsley or cilantro.

- 1. Peel and devein shrimp.
- 2. Par cook bacon. You will only be able to cook it on the grill for about 5-6 min., so make sure you pre cook it some.
- 3. Wrap 1/2 slice of par cooked bacon around shrimp and place on skewer. Brush both sides of wrapped shrimp with Buttery Honey BBQ sauce. Shrimp cooks very fast, cook on each side 2-3 min. Do Not overcook.
