ORANGE, WALNUT, GORGONZOLA AND MIXED GREENS SALAD WITH FRESH CITRUS VINAIGRETTE

A tasty summery salad made with fresh oranges, red onions, glazed walnuts, and Gorgonzola cheese, then topped with a homemade citrus vinaigrette! Easy and delicious!

Orange, Walnut, Gorgonzola and Mixed Greens Salad with Fresh Citrus Vinaigrette image

Steps:

  • Place the walnuts in a skillet over medium heat. Cook 5 minutes, stirring constantly, until lightly browned.
  • In a large bowl, toss the toasted walnuts, salad greens, oranges, and red onion.
  • In a large jar with a lid, mix the olive oil, vegetable oil, orange juice, sugar, vinegar, mustard, oregano, and pepper. Seal jar, and shake to mix.
  • Divide the salad greens mixture into individual servings. To serve, sprinkle with Gorgonzola cheese, and drizzle with the dressing mixture.

Steps:

  • Heat butter in a 3-quart heavy saucepan over moderate heat until foam subsides, then cook shallot, stirring, until golden brown, about 5 minutes. Stir in remaining ingredients and simmer briskly, uncovered, stirring occasionally, until thickened and reduced to about 2 1/4 cups, about 25 minutes.

1 cup thawed frozen orange juice concentrate (8 oz)
1/2 cup water
1/2 cup sweet orange preserves
1/2 cup balsamic vinegar

  • If using strawberries, remove the leaves and cut into quarters. For oranges, cut into segments or supremes. For raspberries, blackberries, or blueberries -- simply wash them. Pour the liqueur syrup over the fruit and serve immediately or allow to marinate in the fridge for up to 24 hours.
  • In a stand mixer fitted with the whisk attachment, add the heavy cream and salt. Beat on high just until the cream becomes pillowy. Be careful not to over-beat or the cream will turn to butter.
  • To serve, spoon the drunken fruit into bowls and top with a bit of cream. Garnish with caramel dust.
