Orange Walnut Chicken image

Steps:

  • Brown Chicken Breasts in Oil and Butter and Garlic.
  • Place in Baking Dish.
  • In same pan, with drippings the remaining ingredients.
  • Heat until hot over medium heat.
  • Pour over chicken.
  • Bake in oven, until done approximately 25-30 minutes.
  • To hold until dinner, you can place foil over pan and reduce heat. If needed to add extra liquid, add 1/2 water to chicken.

1 tablespoon butter
4 green onions, sliced thin
1/2 cup orange marmalade
1/2 cup orange juice
1/4 cup lemon juice
2 tablespoons honey
1 tablespoon grated orange peel
1 tablespoon grated lemon peel
1/2 teaspoon salt
1/8 teaspoon pepper

This recipe seems difficult and time consuming but there is 3 hours of refrigeration 1 to 1-1/2 to cook. I make this for my husband nowadays, not usually made for company.

1 clove garlic, minced
4 chicken breast halves, skinless and boneless
1/2 c walnuts, coarsely chopped
1 Tbsp butter or margarine
4 green onions, thinly sliced, divided
1/2 c orange marmalade
1/2 c orange juice
1/4 c lemon juice
2 Tbsp honey
1-2 Tbsp orange peel, grated
2-3 tsp lemon peel, grated
1/2 tsp salt
1/8 tsp pepper
rice, cooked, hot

ORANGE CHICKEN WITH GREEN ONIONS AND WALNUTS

This is soooo good. Orange Chicken in the slowcooker... now that's my kind of cookin. Serve over rice and sprinkle walnuts on top and you've got dinner made easy. Time does not include slow cooking 8 hours!

Steps:

  • MIX broth, teriyaki sauce, garlic, marmalade, 1/4 cup green onions and cornstarch in 6-qt. slow cooker. Add chicken and turn to coat.
  • COVER and cook on LOW 8 to 9 hr.* or until chicken is no longer pink. Sprinkle with walnuts and remaining green onions before serving. Serve with rice.

Steps:

  • In a large resealable plastic bag, combine orange juice concentrate, 2 T. oil, soy sauce, and garlic. Add chicken; seal bag and turn to coat. Refrigerate for 2-3 hours. Remove chicken; reserve marinade.
  • In a skillet, cook chicken in remaining oil until juices run clear.
  • Meanwhile, in a saucepan sauté walnuts in butter until lightly browned; remove and set aside. Set aside 1/4 cup of green onions for garnish. Add remaining onions to saucepan; sauté until tender. Add reserved marinade and the next 8 ingredients. Bring to a rolling boil; boil for 2 minutes. Reduce heat; simmer, uncovered for 5-10 minutes or until sauce reaches desired consistency.
  • Serve chicken over rice; top with sauce and reserved walnuts and onions.

Steps:

  • In a small bowl, combine the orange juice concentrate, 4 tablespoons oil, soy sauce and garlic. Pour half of marinade into a large resealable plastic bag; add the chicken. Seal bag and turn to coat; refrigerate for 2-3 hours. Cover and refrigerate remaining marinade. Discard marinade from chicken. In a large skillet, cook chicken in remaining oil until a meat thermometer reads 170°. Meanwhile, in a small saucepan, saute walnuts in butter until lightly browned; remove and set aside. Set aside 1/4 cup green onions for garnish. Add remaining onions to saucepan; saute until tender. Add the next eight ingredients and reserved marinade. Bring to a boil. Reduce heat; simmer, uncovered, for 5-10 minutes or until sauce reaches desired consistency. Serve chicken with rice; top with sauce and garnish with reserved walnuts and onions. Yield: 4 servings.
