Steps:
- To Make Marinade: Combine the soy sauce, honey, orange juice, garlic, oregano, pepper and paprika. Mix all together and pour over chicken pieces. Refrigerate for 2 to 4 hours.
- Preheat oven to 350 degrees F (175 degrees C).
- Remove chicken from refrigerator. Place chicken and marinade in a 9x13 inch baking dish and bake, uncovered, in preheated oven for 1 1/2 hours. Baste once.

- Mix orange juice, honey, soy sauce, lemon juice, and ginger together in a small bowl.
- Place salmon in a shallow dish. Pour all but 3 tablespoons of the orange juice mixture on top. Reserve remaining mixture in the bowl. Let salmon marinate at room temperature for 30 minutes.
- Preheat oven to 450 degrees F (230 degrees C).
- Transfer salmon to a baking dish lined with aluminum foil; pat dry with paper towels. Discard marinade. Spoon 1 tablespoon of reserved orange juice mixture over salmon; season with salt and pepper. Drizzle olive oil on top.
- Bake in the preheated oven until heated through, about 6 minutes. Spoon remaining 2 tablespoons orange juice mixture over salmon. Continue baking until flesh flakes easily with a fork, 6 to 9 minutes more. Serve with lemon wedges.

- Make the orange marinade by whisking together the orange juice, soy sauce, rosemary, and garlic. Pour over pork tenderloin and marinate for at least one hour, preferably overnight.

ORANGE-SOY-BRAISED PORK RIBS

- Put oven rack in middle position and preheat oven to 325°F.
- Sprinkle ribs evenly with salt.
- Bring orange juice, soy sauce, sugar, ginger, garlic, and pepper to a boil in roasting pan over moderately high heat, stirring until sugar is dissolved. Add ribs in 1 layer using tongs, turning to coat, and cover pan tightly with foil.
- Braise ribs in oven until very tender, about 2 hours. (If making ahead, see cooks' note, below.)
- Before serving:
- Reduce oven temperature to 200°F.

- Put the pork tenderloins in a covered shallow dish or resealable bag. In a measuring cup, combine the remaining ingredients and pour them over the meat, massaging the marinade into the meat if you are marinating for a shorter period of time. Marinate the meat in the refrigerator, turning a couple of times, for at least 1 hour and for up to 24 hours.
- Preheat the grill to medium-high heat (about 400 degrees if you have a gas grill). (Alternatively, you can bake the pork in a 400-degree oven with the marinade for about 25 minutes.)
- Remove the pork from the marinade, transfer the marinade to a small saucepan, and grill the tenderloins for about 20 minutes total, flipping once or twice, until they are just cooked through (the outsides should be browned and the tenderloins should have a tiny bit of pink remaining in the middle).

- Combine the marinade ingredients in a large bowl–soy sauce, orange juice, ginger, garlic, honey and scallion, if using. Remove 2 tablespoons of the marinade to a separate small bowl before adding the fish to the marinade. Reserve these 2 tablespoons for later.
- Rinse and pat dry the mahi mahi. Place the mahi mahi in the larger bowl with most of the marinade. Gently toss the fish so that it is well combined with the marinade. Set aside, and let the mahi mahi marinade for about 10 minutes.
- mahi: Coat a large nonstick skillet with the cooking oil, and heat on medium high heat. Add the mahi mahi, skin side down*. Cook for 4 minutes, then turn the mahi mahi over to the other side. - After turning the fish over for the final 2 minutes of cooking, take the reserved 2 tablespoons of orange soy sauce and spread evenly over the fish. Remove if it’s done, or allow another minute or two of cooking if needed.
