JEWELED RICE WITH DRIED FRUIT

Jeweled Rice with Dried Fruit image

Steps:

  • Rinse rice in several changes of cold water in a large bowl until water runs clear. Drain in a large sieve.
  • Bring water and salt to a boil in a 6-quart heavy pot, then add rice and boil, uncovered, stirring occasionally, 5 minutes from time water returns to boil. Drain rice in sieve.
  • Toss together dried fruit in a bowl. Melt 6 tablespoons butter with cardamom and pepper in cleaned and dried pot, stirring to combine, then alternately layer rice and dried fruit over it, beginning and ending with rice and mounding loosely. Make 5 or 6 holes in rice to bottom of pot with round handle of a wooden spoon, then cover pot with a kitchen towel and a heavy lid. Fold edges of towel up over lid (to keep towel from burning) and cook rice over moderately low heat, undisturbed, until tender and a crust forms on bottom, 30 to 35 minutes. Remove from heat and let rice stand, tightly covered and undisturbed, at least 30 minutes.
  • Heat remaining 2 tablespoons butter in a small skillet over moderate heat and cook pistachios, stirring, until lightly browned, 2 to 3 minutes.
  • Spoon loose rice onto a platter, then break crust into 1-inch pieces and scatter over rice. Sprinkle with pistachios.

3 cups basmati rice (1 1/4 lb)
4 qt water
3 tablespoons salt
1/2 cup dried apricots (3 1/2 oz), quartered
1/2 cup golden raisins (3 oz)
1/2 cup dried cranberries (2 oz)
1 stick (1/2 cup) unsalted butter
1/2 teaspoon ground cardamom
1/2 teaspoon black pepper
1/2 cup coarsely chopped shelled unsalted pistachios (not dyed red; 2 1/2 oz)

VEGETARIAN OSVO (OSH-SEVO)--BOCHARI RICE CHOLENT

It sounds crazy, I know--putting fruit and tomatoes in a rice dish that cooks overnight in a crockpot. But all the ingredients blend together into a sweet, savory, sticky rice cholent that is just delicious. Bocharim know rice, and they know how to cook!

Vegetarian Osvo (Osh-Sevo)--Bochari Rice Cholent image

Steps:

  • Cover the bottom of the cholent pot with oil & heat.
  • Add tomatoes, then apple, then apricots, then plums, then dates.
  • Cover the pot and leave it covered. Let the juices dry up and then add the rice, tomato paste, and enough water to cover everything with 1cm to spare.
  • Cover the pot with a dish towel and then with a lid, and simmer until the water dries up.
  • Seal the pot well by covering it with aluminum foil, and put on the hot plate right before Shabbat. Eat the following morning for Shabbat brunch.
  • PS: the bottom of the pot will have rice that has burnt into a caramelized delicious goo. This is called "tadigi" and is usually the best part!

OSH / PLOV - UZBEK / CENTRAL-ASIAN RICE

I first had osh in Uzbekistan, then later in various forms called plov in Kazakhstan. It's a belly-warming mixture of rice with spices, lamb, onion, and carrots lovingly fried, stirred. The Uzbek osh is my favourite with it's stronger spices.

Osh / Plov - Uzbek / Central-Asian Rice image

Steps:

  • Wash the rice. Allow to soak in salted water for 30 minute You can use Thai or basmati rice.
  • Cut the lamb shoulder into cubes. It should have some fat. Bones are optional.
  • Slice the onions thinly and cut the carrots into strips. You should approximately equal amounts of carrots, onions, and lamb.
  • Heat a large cast-iron or metal wok with the oil. Don't use olive oil. Sunflower oil works well. Animal fat tastes richer but is even worse for you and too heavy for many taste buds. While you can get away with any kind of pot, it does taste better if you have an appropriate seasoned instrument.
  • Fry the onions until golden brown.
  • Add chopped garlic and lightly brown. You can alternatively put the whole cloves into the rice when you cook the rice.
  • Add lamb and fry until cubes are lightly browned.
  • Add carrots, salt, pepper, all spices (adjust to your taste), and 2 cups of water. Turn down the fire, mix well, and cover for 5 min to allow carrots to soften.
  • This completes the first step called "zirvak". You are now ready to cook the rice in the second step. Drain your rice which should have been soaking for 30 minute.
  • Push the ingredients to the outer parts of your cooking wok/pot creating a large hole in the centre which will be filled with liquid.
  • Carefully add your rice to the centre of the pot. Do not mix it with the rest of the ingredients. Try to fit most of it in the centre "hole".
  • Add another 1.5 cups of water, cover the pot and allow to simmer until the rice is cooked and water has been dried up. This will take approximately 30 minute.
  • Stir the entire mixture well and serve on a hearty plate or bowl. Top with spring onions. It goes well with a side-serving of salad, tomatoes, and bread. Naan or other type of flat bread would be best.
