Steps:
- Preheat oven to 400 degrees F (200 degrees C). Lightly grease a large, shallow baking dish.
- Arrange flounder fillets on prepared baking dish and brush with 1 tablespoon butter. Combine remaining 3 tablespoons butter with bread crumbs, Parmesan cheese, salt, pepper, and thyme in a bowl; sprinkle over flounder.
- Bake in preheated oven until fish flakes easily with a fork, 15 to 20 minutes. Carefully transfer fillets to a plate with a spatula.

- 1. Preheat oven to 425ºF. Add about ¾ cup of panko to a spice grinder and process until fine.
- 2. In a small bowl, combine breadcrumbs, cheese, paprika, black pepper and parsley; stir in butter. Sprinkle over fillets and, with fingers, gently tap breading down to make it stick. Place fillets on a lightly grease baking sheet lined with foil.
- 3. Cook in preheated oven, uncovered, for 15-20 minutes or until fish flakes easily with a fork. Serve with *Spicy Tropical Salsa
- 4. Note: Cooking time varies with the thickness of the fillet. If fillet is thin, start checking around 12 minutes.

- Put flour and eggs into 2 separate dishes. Combine bread crumbs, cilantro, lime zest, garlic powder, cayenne pepper, salt, and black pepper in a third dish.
- Season tilapia fillets with salt and pepper. Put 1 fillet in flour, coat both sides, and gently shake off excess. Dip into eggs, turning once, then dredge in the bread crumb mixture to coat. Repeat with remaining fillets.
- Heat oil in a large skillet over medium heat. Place fillets in the skillet and cook until crust is golden and fish is easy to lift with a spatula, 3 to 4 minutes. Turn and cook on the other side until fish flakes easily with a fork, another 3 to 4 minutes.
