Steps:

  • Preheat a baking sheet on the lower rack in a 450 oven. Blanch 1 head chopped broccoli in boiling water with salt and sliced garlic for 1 minute; drain. Toss with a splash of olive oil, a handful each of breadcrumbs and parmesan, salt and pepper. Place on the hot baking sheet and top with more cheese and breadcrumbs; roast until golden, 15 minutes.

Parmesan-Roasted Broccoli image

Steps:

  • Preheat the oven to 425 degrees F.
  • Cut the broccoli florets from the thick stalks, leaving an inch or two of stalk attached to the florets, discarding the rest of the stalks. Cut the larger pieces through the base of the head with a small knife, pulling the florets apart. You should have about 8 cups of florets. Place the broccoli florets on a sheet pan large enough to hold them in a single layer. Toss the garlic on the broccoli and drizzle with 5 tablespoons olive oil. Sprinkle with the salt and pepper. Roast for 20 to 25 minutes, until crisp-tender and the tips of some of the florets are browned.
  • Remove the broccoli from the oven and immediately toss with 1 1/2 tablespoons olive oil, the lemon zest, lemon juice, pine nuts, Parmesan, and basil. Serve hot.

4 to 5 pounds broccoli
4 garlic cloves, peeled and thinly sliced
Good olive oil
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
2 teaspoons grated lemon zest
2 tablespoons freshly squeezed lemon juice
3 tablespoons pine nuts, toasted
1/3 cup freshly grated Parmesan cheese
2 tablespoons julienned fresh basil leaves (about 12 leaves)

This is an excellent hot appetizer, and a particular favorite of mine to serve with any kind of meatballs. These always go fast once they come out of the oven, and are a good way to sneak in some tasty vegetables.

Steps:

  • Cook frozen broccoli according to package directions; drain well.
  • Combine all ingredients, mixing well.
  • Pour mixture into a sheet pan and spread evenly; Refrigerate.
  • When firm, roll mixture into small (1 inch) balls.
  • Roll balls in Parmesan cheese.
  • Freeze.
  • To serve: Put frozen broccoli balls in a preheated 350 degree F. oven and bake for 35-40 minutes, or until golden brown.

Quick and Easy Garlic Broccoli with Parmesan image

Steps:

  • Place broccoli in a microwave-safe dish and microwave on high until defrosted, 3 to 4 minutes; they should be defrosted but not cooked all the way.
  • Add 1/4 cup Parmesan and garlic, stir, and cook for another 2 to 3 minutes. Season with salt and pepper and stir.
  • Serve with extra Parmesan sprinkled over top.

Oven-Baked Cheesy Broccoli Balls image

Steps:

  • Place the frozen broccoli in a microwave-safe bowl and microwave on HIGH for 5-6 minutes; cool and squeeze out any excess moisture with hands, place in a large bowl.
  • Add in stuffing mix, Parmesan cheese, cheddar cheese, onion, beaten eggs, seasoned salt, garlic powder, black pepper and cayenne to taste (if using) mix until combined adjusting seasoned salt and pepper to taste.
  • Cover and refrigerate for 4 or more hours or until all the moisture is absorbed and the mixture is completely cold.
  • Shape into 1 or 1-1/2-inch balls, then place onto greased baking sheet.
  • Set oven to 325.
  • Bake for 12-15 minutes for 1-inch balls (bake a little longer for 1-1/2-inch balls) or until browned.
  • If desired immediately sprinkle finely grated cheddar cheese on top.

  • Place the almonds in a food processor. Process until they're coarsely ground (see image in post--it's important to not under- or over-process!). Transfer ground almonds to a medium bowl.
  • Now place the broccoli florets in the food processor and pulse until chopped. Add the chopped broccoli, cheese, and garlic to the almonds and season with salt and pepper to taste. Stir in the egg.
  • Spray a mini-muffin tin with olive oil or cooking spray. Form the broccoli mixture into 12 balls, squeezing them a little to make sure they hold their shape, and place each one in its own cup in the muffin tin. Bake until meatballs are golden on the outside and heated through, about 20 minutes. Remove tin from oven and run a butter knife along the edges of each muffin cup to loosen meatballs before gently popping them out.
