Dijon-Parmesan Chicken Breasts image

Steps:

  • Heat oven to 400°F. Spray 15x10x1-inch pan with cooking spray. Place cereal in resealable food-storage plastic bag; seal bag and finely crush with rolling pin or meat mallet (or finely crush in food processor).
  • In shallow bowl, mix cereal, cheese, basil, garlic salt and pepper. In another shallow bowl, mix egg white and mustard until blended.
  • Dip chicken into egg white mixture, then coat well with cereal mixture; place in pan. Drizzle oil over chicken.
  • Bake 20 to 25 minutes or until juice of chicken is clear when center of thickest part is cut (170°F).

  • Heat oven to 375°F. Mix butter and mustard in shallow dish until well mixed. Mix bread crumbs and cheese in large plastic bag.

Steps:

  • Preheat oven to 400° F. In a shallow dish stir, together bread crumbs, Parmesan cheese and pepper. Brush both sides of each chicken breast with mustard. Press the chicken breasts into the crumb mixture, coating both sides completely.
  • Spray the chicken on both sides with spray. Set a large, ovenproof sauté pan over medium heat. Add chicken and brown on each side, 1 - 2 minutes. Transfer to oven and bake 15 - 20 minutes, until meat thermometer inserted in center registers 170° F.

Steps:

  • Thin the mustard with white wine until a dipping consistency is reached. Set aside.
  • Combine the breadcrumbs and cheese.
  • Dip the chicken pieces in the mustard mixture and then roll in the crumb mixture.
  • Bake the chicken on a greased baking sheet at 375 degrees for 45 minutes or until cooked through.

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a large sheet pan or jelly roll pan with aluminum foil and coat with nonstick cooking spray.
  • Mix bread crumbs and Parmesan cheese in a small bowl. Set aside.
