- In a food processor, combine the first seven ingredients. Cover and process until crumbly; set aside., Place peaches in an 11x7-in. baking dish coated with cooking spray; drizzle with orange juice concentrate. Sprinkle with almond mixture. Bake at 400° for 20-25 minutes or until topping is golden brown. Serve warm with ice cream if desired.

Peaches and almonds are a really yummy combination, so this recipe from Malta is sure to please! I found this on site featuring recipes from Malta and adjusted measurements to reflect common US amounts.

Steps:
- Preheat oven to 350ºF. Put peach slices and apple juice in a large saucepan over medium heat. Cover and cook for 7-10 minutes until just tender, drain.
- In a bowl, combine the almond meal, flour, olive oil, sugar, vanilla extract and baking powder. Mix them together by rubbing with finger tips until it resembles fine breadcrumbs.
- Grease the sides of a 2 quart oven dish. Arrange the cooked peaches in the base, top with the flour/almond mixture, and bake for 35-40 minutes until golden.
ALMOND CRUMBLE TOPPING
Steps:
- Combine flour, sugar and nutmeg in a mixing bowl; stir well to mix and stir in sliced almonds.
- Stir in the butter evenly. Set aside for 5 minutes, then, using your fingertips, break the mixture into 1/4 to 1/2 inch crumbs. Set aside again while you prepare the filling.

- Heat oven to 200C/180C fan/gas 6. Drain the peaches, but reserve the juice. Tip the peaches into a deep baking dish, roughly 20 x 30cm. Scatter over the lemon zest and juice and 1 tbsp of the agave, then toss everything together.
- In a bowl, combine the flour, oats, butter, remaining agave and 4 tbsp of the reserved peach juice. Mix together, first with a spoon, then with your fingers, until you have a rough crumbly mixture. Scatter over the peaches, then bake for 35 mins until golden and crunchy on top.

- In a medium bowl, mix together the diced peaches, cornstarch, vanilla extract, and ¼ teaspoon of cinnamon until thoroughly combined.
- In a separate bowl, mix together the oats, oat flour, pecans and remaining cinnamon. Add in the honey and coconut oil, mixing until completely incorporated.
- Spread the peach mixture into the prepared pan, and evenly sprinkle the oat mixture on top. Bake at 350°F for 35-45 minutes, or until the peach juice is bubbling and the oat mixture turns crunchy. Cool completely to room temperature. For best results, let the crumble rest for 2 hours at room temperature before serving to allow juices to thicken.
