ROASTED PEARS WITH CARAMEL SAUCE

This golden, glossy delight could not be easier to make. All major varieties of pears - Bartlett, Bosc, red, Anjou - work equally well. However, Bosc roasts up slightly firmer than the others.

Steps:

  • Adjust oven rack to center position and heat oven to 400 degrees. Place butter in a baking pan large enough to hold the pears in a single layer: set in the heating oven until it melts.
  • Sprinkle sugar over melted butter, then place pears, cut side down, on top. Bake until tender, about 30 minutes.
  • Remove pan from oven, turn pears over and baste with pan sauce. Return to oven; bake until golden and glossy, about 10 minutes longer.
  • Let cool slightly. Transfer pears to dessert plates or bowls. Top each with dollop of sour cream, drizzle with caramel pan sauce, sprinkle with nuts and serve.

Steps:

  • For crust:
  • Roll out pastry to 12-inch square and trim off corners, forming slightly rounded crust. (If using all-butter puff pastry, roll out to 12-inch round.) Transfer pastry to 10-inch-diameter springform pan, pressing pastry firmly onto bottom and 1 to 1 1/2 inches up sides of pan. Freeze crust until firm, 1 to 1 1/2 hours. DO AHEAD: Can be made 1 day ahead. Cover and keep frozen.
  • For pears:
  • Melt butter in heavy large skillet over low heat. Add sugar and next 4 ingredients. Scrape in seeds from vanilla bean; add bean. Increase heat to medium-high and cook, stirring until sugar melts and turns brown (color of peanut butter), about 3 minutes. Reduce heat to medium; add pears, rounded side down. Cook until pears are almost tender, turning and moving skillet around occasionally to ensure even cooking, 10 to 15 minutes, depending on ripeness of pears. Carefully turn pears over; continue to cook until pears are very tender, about 10 minutes longer. Remove skillet from heat; cool pears in skillet with spices (pears will release juice while cooling).
  • For filling:
  • Melt butter in small saucepan over low heat. Scrape in seeds from vanilla bean; add bean. Add cinnamon, star anise, and cloves. Increase heat to medium; cook until butter is golden (watch to avoid burning), 3 to 4 minutes. Remove vanilla bean and spices from butter; discard. Whisk sugar, egg, and coarse salt in medium bowl. Whisk in flour. Gradually whisk browned butter into egg mixture. DO AHEAD: Pears and filling can be made 6 hours ahead. Cover separately; let stand at room temperature. Whisk filling before using.
  • Position rack in center of oven; preheat to 400°F. Brush frozen crust with beaten egg white. Pour filling into crust; spread evenly over bottom of crust (filling will be very thin). Using slotted spatula, remove pears from skillet, allowing excess syrup to drain back into skillet; reserve syrup. Arrange pears, rounded side up, atop filling (about 9 around edge and 3 in center of pan).
  • Bake tart until crust is deep golden and filling is set and brown at edges, about 1 hour. Run small knife around sides of pan to loosen tart. Release pan sides. Transfer tart to platter. Let stand, uncovered, at room temperature to cool slightly until just warm.
  • Just before serving, boil syrup in skillet until reduced to generous 1/3 cup, 1 to 2 minutes. Discard spices. Drizzle syrup over pears. Serve tart slightly warm.

Crust:
1 sheet frozen puff pastry (half of 17.3-ounce package), thawed, or one 14- to 16-ounce package all-butter puff pastry (1 to 2 sheets, depending on brand), thawed
Pears:
3 tablespoons unsalted butter
1/2 cup sugar
1 cinnamon stick
1 whole star anise
3 whole cloves
Generous pinch of coarse kosher salt
1/2 vanilla bean, split lengthwise
6 medium firm but ripe Anjou pears, peeled, halved lengthwise, cored
Filling:
1/4 cup (1/2 stick) unsalted butter
1/2 vanilla bean, split lengthwise in half
2 cinnamon sticks, broken in half
2 whole star anise
6 whole cloves
1/4 cup sugar
1 large egg
Generous pinch of coarse kosher salt
1 1/2 tablespoons all purpose flour
1 egg white, beaten to blend
Ingredient Info: All-butter puff pastry is available frozen at Whole Foods markets. One 14- to 16-ounce package contains two 11-inch rounds. Whole star anise is available in the spice section of some supermarkets.

Baked Pears on Sugared Puff Pastry with Caramel Sauce image

Steps:

  • Make pastry bases:
  • Preheat oven to 375°F. and lightly butter a heavy baking sheet.
  • Sprinkle a work surface with granulated sugar and roll out puff pastry about 1/8 inch thick, turning once to coat both sides with sugar. Cut out 4 rectangles, each about 4 1/2 by 3 1/2 inches, and transfer to baking sheet, reserving scraps for another use. Prick pastry all over with a fork and put baking sheet in freezer until pastry is chilled well, about 15 minutes.
  • Lightly butter bottom of another heavy baking sheet and put directly on top of pastry rectangles to weight them while baking. Bake pastry (between 2 baking sheets) in middle of oven 25 to 35 minutes, or until golden brown, and transfer to a rack to cool. Pastry bases may be made 1 day ahead and kept in an airtight container.
  • Make pears and sauce:
  • Preheat oven to 375°F. (if pastry bases have been made ahead) and lightly butter a small baking dish just large enough to hold 4 pear halves in one layer.
  • Peel, halve, and core pears. Arrange pear halves in baking dish, cut sides up. Divide butter among pear cavities and sprinkle 1/4 cup granulated sugar over pears. Sprinkle lemon juice over pears and bake in middle of oven 15 minutes. Remove baking dish from oven and turn pears so that cut sides are down. Baste pears with cooking juices and return to oven. Bake pears until tender, about 15 minutes more. Transfer pears to a plate and keep warm.
  • Transfer cooking juices to a small heavy saucepan. Add remaining 1/4 cup granulated sugar and boil, swirling pan, until mixture turns a deep golden caramel. Slowly add cream (caramel will bubble up) and simmer sauce, whisking, until slightly thickened, about 5 minutes. Stir poire William into caramel sauce.
  • Sprinkle each pastry base with confectioners' sugar and top with a pear half. Serve baked pears with caramel sauce.

For pastry bases
1/4 cup granulated sugar
1 sheet frozen puff pastry (about 1/2 pound), thawed
For pears and sauce
2 large firm-ripe Bartlett pears (about 1 pound)
2 tablespoons unsalted butter, cut into bits
1/2 cup granulated sugar
1 tablespoon fresh lemon juice
1/2 cup heavy cream
1 tablespoon Poire William
confectioners' sugar for sprinkling

  • Preheat your oven to 375F/190C. Line a baking sheet with parchment paper. Roll out your puff pastry. If you are using a block, dust your work surface with some flour and roll out a rectangle 1/4″ thick. Divide your rectangular shaped puff pastry into 8 small rectangles. With a sharp knife, cut an “L” into 2 opposing corners, don’t cut all the way but leave a ½-inch in two corners. Brush with the beaten egg . Pick up the cut corners of the pastry, cross them over each other (one over, one under) and lay them flat (now on opposite sides). Brush the tops of the pastry with the egg wash and put the prepared pastries in the refrigerator to chill.
  • While the pastry is chilling, prepare the pear filling. Peel the pears and split them in half lengthwise, core them, and slice in 1/4″ slices.
  • Take the pastry shells out of the fridge and set them on your work surface, place one pear half in the centre of each tart. Then sprinkle with a teaspoon of brown sugar and a teaspoon/5ml of double cream per tart, then add a pinch sea salt on top. Bake in the preheated oven for 30 minutes or until pears are soft and pastry is golden.

  • If preparing your own pastry dough, give yourself enough time to allow it to chill for at least 2 hours, or overnight. To prepare the pastry dough: combine flour and salt. Cut in chilled butter and shortening with two forks or a pastry blender until mixture is a coarse pea sized blend. Add ice water 1 Tablespoon at a time, mixing between each addition, until just combined. I generally add 5 Tablespoons. Form into a disk and wrap in plastic wrap to chill.
  • Halve and core bosc pears. Heat 10-inch oven-proof skillet over medium heat on the stove. Add butter and melt. After approximately 1 minute, add sugar and stir with rubber spatula until combined.Add cored pears, cut side
