BUTTER PECAN FUDGE

Steps:
- Line an 8-in. square pan with foil; grease foil with 1 teaspoon butter., In a large heavy saucepan, combine remaining butter, granulated and brown sugars, cream and salt. Bring to a rapid boil over medium heat, stirring constantly. Cook, without stirring, until a candy thermometer reads 234° (soft-ball stage). Remove from heat. Add vanilla to pan (do not stir)., Cool, without stirring, to 110°, about 30 minutes. Beat with a spoon until fudge just begins to thicken. Gradually stir in confectioners' sugar until smooth; add nuts and continue stirring until fudge becomes very thick and just begins to lose its sheen. Immediately spread into prepared pan. Cool., Using foil, lift fudge out of pan. Remove foil; cut fudge into 1-in. squares. Store between layers of waxed paper in an airtight container.

My grandma makes these every year for the holidays. It's always handy to make extra for later snacking! They are relatively quick and easy to make and taste wonderful. I love the smell of these when they're in the oven.

- Preheat oven to 325 degrees F (165 degrees C).
- Beat egg white in a large bowl with an electric mixer until frothy. Add pecans to egg white and stir until evenly coated.
- Mix sugar, cinnamon, and salt together in a separate bowl; add to pecans and stir until coated. Spread coated pecans onto a baking sheet.
- Bake in the preheated oven until fragrant and crisp, about 25 minutes.

- Line an 8-in. square pan with foil and butter the foil; set aside. Place pecans in a microwave-safe pie plate. Microwave, uncovered, on high for 3 minutes, stirring after each minute; set aside. , In a 2-qt. microwave-safe bowl, combine chocolate chips and milk. Microwave, uncovered, on high for 1 minute. Stir until smooth. Stir in vanilla and 3/4 cup pecans. Immediately spread into the prepared pan. Sprinkle with remaining pecans, pressing to adhere., Cover and refrigerate until firm, about 2 hours. CINNAMON-CHOCOLATE FUDGE

- Butter the bottom and sides of an 8 by 8-inch baking pan. Line the pan with a sheet of parchment paper, about 14-inches long and 7-inches wide, allowing the excess to overhang the sides. Set aside
- In a medium glass or stainless steel bowl, combine the condensed milk, cinnamon, and vanilla. Stir in the chocolate chips and butter. Put the bowl on a saucepan of barely simmering water and mix until the chocolate chips have melted and the mixture is smooth, about 6 to 8 minutes (mixture will be thick). Using a spatula, scrape the mixture into the prepared pan and smooth the top. Sprinkle with salt, if desired. Refrigerate for at least 2 hours until firm.
- Run a warm knife around the edge of the pan to loosen the fudge. Remove the fudge to a cutting board. Peel off the parchment paper and cut the fudge into 1-inch pieces. Store refrigerated in an airtight container or freeze.

- 1. Line an 8-8 inch square pan with foil for better removal. Lightly grease foil.
- 2. Mix sugar, cocoa, cinnamon, and salt in medium mixing bowl.
- 3. Heat butter, cream, and coffee granules in a small saucepan until butter melts.
- 4. Remove from heat and add vanilla.
- 5. Pour into sugar mixture.
- 6. Combine thoroughly.
- 7. Stir in pecans or walnuts.
- 8. Place mixture in prepared pan; spread with spoon or pat lightly with oiled hands.
- 9. Chill a minimum of 1 hour.
- 10. Lift fudge from pan. Cut into 1-inch squares with a sharp knife.
- 11. Note: These can be made ahead of time and stored in an airtight container at room temperature until ready to serve.
SOUTHERN STYLE PECAN FUDGE

- Preheat oven to 325 degrees F (160 C).
- Combine sugar, cinnamon and salt in small bowl.
- Whisk egg white in large bowl until frothy. Add pecans to egg white and toss well to coat.
- Add sugar mixture and toss carefully and thoroughly doing your best not to break the pecans.
- Spread pecans in a single layer on a large cookie sheet.
- Bake until toasted and crisp, about 20 minutes turning them over after the first 10 minutes ( take them out of oven and do this and arrange them neatly once again; this helps keep them from sticking to the pan after the 20 minutes).
- Using a spatula, immediately loosen pecans from cookie sheet and let cool.
- Put them in a large plastic container, cover and refrigerate, then you can fill a jar when you want to give them as a small gift!
