PENNE PASTA WITH SPINACH AND BACON

This is a quick light meal. Wilted spinach, bacon and tomatoes are tossed with penne pasta. Good for any season and will complement anything.

Penne Pasta with Spinach and Bacon image

Steps:

  • Bring a large pot of lightly salted water to a boil. Add the penne pasta, and cook until tender, 8 to 10 minutes.
  • Meanwhile, heat 1 tablespoon of olive oil in a skillet over medium heat. Place bacon in the skillet, and cook until browned and crisp. Add garlic, and cook for about 1 minute. Stir in the tomatoes, and cook until heated through.
  • Place the spinach into a colander, and drain the hot pasta over it so it is wilted. Transfer to a large serving bowl, and toss with the remaining olive oil, and the bacon and tomato mixture.

PENNE PASTA WITH CHICKEN/MUSHROOMS/SPINACH image

Steps:

  • Cook the pasta in a large stockpot of boiling salted water according to package directions. Meanwhile, heat 2 tablespoons of the oil in a large heavy skillet over medium-high heat. Add the garlic; cook, stirring, 1 minute. Add the mushrooms, ¼ teaspoon of the salt and pepper. Cook, stirring, until mushrooms begin to brown, about 10 minutes. Transfer to a medium bowl. ############ Add the remaining 2 tablespoons of the oil to the skillet. Add the chicken in one layer; season with remaining ¼ teaspoon of the salt/pepper. Cook, turning once, until chicken is browned on both sides, about 8 minutes. Remove to the bowl with the mushrooms. Pour wine into the skillet; cook, stirring up browned bits, until slightly reduced, 5 minutes. Stir in the reserved mushroom mixture, chicken, cream (or half-and-half). ############### Place the spinach on top; cover. Cook until spinach wilts, about 5 minutes. Pour over drained pasta in a serving bowl; toss to mix.

Steps:

  • Cook pasta according to directions on packet, drain, keep warm.
  • Heat oil in pan, add onion and garlic, cook 1 minute. Add the chicken and mushrooms, cook 2 minutes, or until cooked through. Add the capsicum tp pan.
  • Combine evaporated milk, cornflour, and mustard, and add to chicken mix bring pan to boil, then simmer 1 minute.Remove from heat and while still hot stir in the spinach leaves, and spring onions, stir so as spinach wilts through a little.
  • Serve over pasta, sprinkle with cheese, top with pinenuts.

Creamy Chicken, Mushroom, and Spinach Pasta image

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook bow-tie pasta at a boil, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain and transfer to a serving bowl or a deep platter.
  • Meanwhile, heat olive oil in a large skillet over medium-high heat for 1 to 2 minutes. Season tenders with salt and pepper, place in the hot oil, and cook until lightly brown on one side, 3 to 4 minutes. Turn and cook on the other side until light brown, an additional 3 to 4 minutes. Transfer chicken to a plate.
  • Add mushrooms and onion to the hot skillet and cook until onion is lightly browned, 4 to 5 minutes. Stir in garlic and cook for 1 minute. Stir in chicken broth and mustard, season with salt and pepper, and cook for 5 minutes. Return chicken tenders to skillet and submerge them in the broth mixture.
