PEPPER JACK & GREEN ONION MINI SCONES
UPDATED 04/03/10: Thanks Tea Jenny, for bringing the omission to my attention! The original recipe did in fact call for 1 TBL of Baking Powder! I've been making them without it in the Mini Scone Pan and it didn't seem to make much difference, but for nicely formed scones shaped by hand or with a biscuit cutter, it's a must! I adapted this recipe from one called Quiche Lorraine Scones on the goodLife {eats} blog. I wanted to make a meatless, savory scone, suitable for my Nordic Ware Mini Scone Pan. The pan is not necessary as you can easily pat the dough into a circle and cut into wedges or use a biscuit cutter. These scones are quick and easy to make and keep in the fridge for 5-6 days. Reheat in microwave for just a few seconds to take the chill off. Enjoy with Soup, Chili, for Breakfast, as a Snack ... anytime!

Steps:
- Preheat oven to 400°. Spray mini scone pan with flour-added baking spray or line a baking sheet with parchment paper.
- In small bowl, toss Pepper Jack Cheese and Green Onion with 1 Tablespoon of All-Purpose Flour and set aside.
- In medium bowl, whisk together the All-Purpose Flour, Baking Powder, Cayenne Pepper (if using) and Salt.
- Use a pastry blender, two knives or your fingers (my preference), cut the Butter into the Flour mixture until the butter is pea-size and the flour is silky.
- Lightly beat (2) Eggs and the Half & Half with a fork and add it to the Flour mixture.
- Add the Cheese/Onion mixture to the Flour mixture; use a wooden spoon to fold the mixture until it begins to come together.
- Turn the dough onto a well-floured surface and knead gently for less than a minute.
- Separate into 4 equal parts and pat each one into a portion of the Nordic Ware Mini Scone Pan. Or, pat dough into a 3/4 to 1-inch thick circle or rectangle and cut into desired shapes.
- Lightly beat the remaining Egg with one teaspoon water; generously brush the tops of the scones.
- Bake 18-20 minutes or until golden brown.

- Preheat oven to 375°F.
- Mix first 5 ingredients in large bowl.
- Add cheese and green onions and toss with fork.
- Beat half and half and egg to blend in small bowl.
- Stir egg mixture into dry ingredients and mix gently until dough forms.
- Divide dough in half.
- On lightly floured surface, flatten.
- each piece into 3/4-inch thick round.
- Cut each round into 6 wedges.
- Transfer wedges to baking sheet, spacing evenly.
- Bake scones until tops are brown, about 25 minutes.
- Cool 10 minutes.
- Serve warm.

- Heat a large skillet over medium heat and use either cooking spray or a small amount of oil; add the onions and pork and saute 5 minutes, or until browned, stirring often; remove pork from pan and set aside.

- Preheat oven to 400.
- In a large bowl, sift together the flour, baking powder, baking soda, salt and sugar.
- Cut in the butter and cheese.
- Stir in the black pepper.
- Refrigerate the dough for half an hour.
- Gently stir in the buttermilk or yogurt.
- Gather the mixture into a ball with your hands, and on a well-floured surface roll or pat the dough into a 12 x 8-inch rectangle approximately 3/4-inch thick.
- Grease a baking sheet.
- Using a large spatula, or a couple of spatulas, transfer the dough to the baking sheet.
- Use a dough scraper, baker's bench knife or a knife to cut dough into 1 1/2-inch squares.
- Separate the squares slightly on the baking sheet.
- Brush each square with a little milk, if using.
- Bake the scones in oven for 15 to 20 minutes, or until they're very lightly browned.

- Cook bacon in a heavy medium skillet over medium heat until crisp. Using a slotted spoon, transfer bacon to food processor. Add Twisted Butter Bacon, Dijon Mustard & Green Onion Butter, garlic, Italian parsley, cilantro, cayenne pepper, black pepper, and coarse salt. Blend until smooth, occasionally scraping down sides of bowl. With machine running, gradually add white wine, then fresh lemon juice and continue to process until blended.
- Place large sheet of waxed paper on work surface. Drop butter mixture by heaping tablespoonfuls onto paper in long log. Using the paper as an aid, shape butter into a 2-inch-diameter log. Wrap to enclose; chill butter until firm, at least 2 hours.
- Prepare barbecue (medium-high heat). Spread 1/2-inch-thick layer of rock salt on large rimmed baking sheet. Place baking sheet on grill rack and heat 20 minutes.
- Cut twenty-four 1/8- to 1/4-inch-thick rounds from cayenne-butter log. Transfer hot baking sheet from grill to heatproof surface. Nestle oysters in hot rock salt. Top each oyster with slice of cayenne butter.
- Return baking sheet with oysters to grill. Close grill and cook until butter melts and starts to brown, about 6 to 8 minutes. Spoon a shallow layer of additional rock salt onto each of 6 plates. Nestle 4 grilled oysters in the rock salt on each plate and serve.

- Heat oven to 400 degrees.
- In a small skillet, saute onions in margarine until crisp tender; set aside. Cool slightly.
- Lightly spoon flour into measuring cup and level off with a knife.
- In a medium bowl, combine flour, sugar, baking powder, pepper and salt; blend well.
- Add whipping cream, egg and sauteed onions; stir just until moistened.
- On floured surface, knead dough gently 5 or 6 times.
- Place on ungreased cookie sheet; press into an 8" circle about 1/2 inch thick.
- Cut into 8 wedges; separate slightly.
- Bake at 400 degrees for 12-16 minutes or until very lightly browned.
- Brush with melted butter or margarine.

- Place flour, baking powder, garlic salt in mixing bowl and stir together. Grate cold butter into mixture and stir till coarse meal.
- In a seperate bowl whisk together buttermilk and egg. Add this to the dry mixture as well as the cheese, onion and ham.Stir just till combined.
- Place this on a floured board and knead a few times. Pat into a 1" thick shape and cut with a large cookie cutter.
- Place on greased baking sheet or sheet lined with parchment paper. Bake at 350 degrees for 20-25 minutes.
