CANDIED SPAM® WITH BACON

SPAM® with bacon is thinly sliced, coated in brown sugar, black pepper, and baked in the oven. This recipe makes a great side for breakfast or brunch but can also be crumbled and used as a topping. Pairing possibilities are nearly endless.

Candied SPAM® with Bacon image

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Mix dark brown sugar and pepper together in a shallow bowl.
  • Coat both sides of luncheon meat slices with brown sugar mixture; arrange in a single layer on a nonstick baking sheet.
  • Bake in the preheated oven, turning halfway, until golden brown, about 15 minutes. Allow to cool slightly before serving.

BACON WRAPPED SPAM BITES WITH SPICY HONEY MUSTARD

Need a quick and easy appetizer? Look no further than these Spam bites (trust us). They're juicy and the hickory-smoked flavor shines through. We love the spice rub. It balances out the flavor of the Spam and bacon. Sweet and tangy, the honey mustard is perfect for dipping.

Bacon Wrapped Spam Bites With Spicy Honey Mustard image

Steps:

  • 1. Whisk together the Dijon mustard, honey, hot sauce, and Worcestershire sauce until well blended, and set aside until ready to serve. (It's best served at room temperature, so you won't need to refrigerate the spicy honey mustard.)
  • 2. Place all of the spice rub ingredients in a gallon-size Ziploc bag, and shake well until thoroughly blended.
  • 3. Cut the Spam into 16 cubes. Place Spam cubes in Ziploc bag and shake until cubes are coated with the seasoning rub.
  • 4. Lie the 16 bacon slices on a flat surface. Place one seasoned Spam cube at the tip of each bacon slice, and roll to the other end so that the top and bottom of Spam is wrapped inside the bacon slice, leaving the sides open (i.e., so sides aren't wrapped in bacon). Secure the end with a toothpick or short skewer.
  • 5. FOR GRILLING: Place Spam Bites on hot for grill 7 to 10 minutes or until bacon is crisp-cooked but still moist, turning frequently for even grilling. FOR OVEN-BAKING: Spam Bites can also be placed on a foiled lined baking sheet and roasted in the oven for 15 to 20 minutes at 375°F. It's best to have about an inch space between them, as they'll stick together and tear the bacon wrap if too close together on the baking sheet.

3/4 c Dijon mustard
4 Tbsp honey
1 - 2 Tbsp hot sauce (I used Louisiana hot sauce but any will do, such as sriracha, etc)
1 1/2 tsp Worcestershire sauce
SPICE RUB
3 Tbsp brown sugar, firmly packed
1 Tbsp Kosher salt
1 Tbsp paprika
1 Tbsp granulated sugar
2 tsp chili powder
2 tsp black pepper
1 tsp ground coriander
1 tsp ground cumin
SPAM BITES
1 can(s) hickory smoke-flavor Spam (12 oz)
8 slice bacon, cut in half (to produce 16 short slices)

BROILED BURGERS WITH SPAM®

Here's a unique recipe that has been in my spouse's family for 3 generations. It was probably created during World War II as a new way to prepare SPAM®, which was widely used in that time of shortages and rationing. These open-faced sandwiches are delicious and economical and are loved by his entire family. They are great for breakfast, lunch, or dinner!

Broiled Burgers with SPAM® image

Steps:

  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Combine luncheon meat, eggs, Cheddar cheese, and onion in a bowl. Add mayonnaise, chili sauce, salt, and hot sauce. Mix well.
  • Spread meat mixture over hamburger bun halves. Place on a baking sheet.
  • Broil in the preheated oven until brown and bubbly, 5 to 10 minutes.
