Steps:

  • Heat a medium pot over medium heat. Add the pepperoni and oil and saute until the fat renders out and the pepperoni is slightly caramelized, about 10 minutes. Add the Italian seasoning and garlic and saute until fragrant, about 10 seconds. Add the crushed tomatoes and salt and pepper to taste; stir and simmer for about 15 minutes. Let cool completely.
  • Preheat the oven to 400 degrees F with a rack in a lower position.
  • Spray the insides of four ovenproof bowls or crocks with plenty of cooking spray. Shingle 6 to 8 slices cheese inside each bowl so the bottoms touch. This creates the coveted cheese bowl effect. Place 3 to 4 mushrooms on top of the cheese. Then ladle about 1/2 cup COOLED pepperoni sauce over the mushrooms.
  • Split the dough into 4 equal portions and roll each portion out on a lightly floured surface into 6- to 8-inch rounds. (You will want a 1-inch overhang over the side of the bowl.)
  • Drape a round of dough on top of each bowl. Spray your fingertips with cooking spray and slide them around the outside edges of the bowls so that the pizzas will slide out easily after baking. Gently pull down and press the dough around the edges to create a seal. (There's no need to vent or dock it.) Place the bowls on a sheet pan.
  • Bake until the crust is just SLIGHTLY golden, about 15 minutes. Let cool 5 minutes, then brush the tops with melted butter to make that crust shiny! Very gently and carefully turn over a bowl into an individual bowl or plate. Take the handle end of your fork and swipe around the inside of the crust rim to help loosen and separate it from the bowl. Lift the bowl away and witness the miracle of this cheesy behemoth. Top with some giardiniera, if you like. Repeat with the remaining pot pies.

One 8- to 10-ounce stick pepperoni, casing removed, cut into small cubes
1 tablespoon olive oil
1 teaspoon dry Italian seasoning
2 cloves garlic, minced
One 28-ounce can crushed tomatoes
Kosher salt and freshly ground black pepper
Nonstick cooking spray, for the bowls
24 to 32 deli mozzarella slices (about 2 pounds)
12 to 16 baby bella mushrooms, left whole
1 pound pizza dough (store-bought is great!)
All-purpose flour, for rolling
2 tablespoons unsalted butter, melted
Hot giardiniera, for topping, optional

Steps:

  • For the pizza dough: Sprinkle the active dry yeast over 1 1/2 cups of warm--not lukewarm--water.
  • In a mixer with a paddle attachment, combine the flour and salt. With the mixer running on low speed, drizzle in the olive oil and mix until combined. Pour in the yeast mixture and mix until combined.
  • Coat a separate mixing bowl with a light drizzle of olive oil and tip the dough in. Form a ball and toss to coat the dough ball in the olive oil. Cover tightly with plastic wrap and allow to rise for at least 1 hour, or up to 3 or 4 days refrigerated.
  • Preheat the oven to 500 degrees F.
  • To prepare the dough for the pizza assembly: Divide the dough into two equal parts. Roll out one part as thinly as possible and place on a baking sheet. Repeat with the second piece of dough.
  • For the basic pepperoni pizza: Spread the sauce over the pizza base. Top with the sliced mozzarella and pepperoni.
  • For the four cheese pizza: Drizzle on the olive oil and sprinkle on some salt and pepper. Pour the jar of pesto onto the dough and spread evenly. Add the mozzarella, fontina, goat cheese and Pecorino Romano.
  • Bake both pizzas until the crusts are golden and the cheese is bubbly, 12 to 15 minutes.
  • For the tomato basil salad: While the pizzas are baking, heat the olive oil over medium-high heat in a small skillet. Add the garlic and stir, lightly frying for about a minute and removing it from the heat before the garlic gets too brown (it can be golden). Pour it into a mixing bowl and allow to cool slightly. Add the tomatoes, balsamic, basil and some salt and pepper to the bowl. Toss to combine, and then taste and add more basil if needed, and more salt if needed. Set aside.
  • Top the four cheese pizza with the tomato basil salad. Cut the pizzas into slices and serve.
  • Add a tablespoon or so of olive oil into a hot pan over medium-high heat. Throw in the garlic and chopped onions and give them a stir. Cook until the onions are soft, 4 to 5 minutes. Add the chicken broth, whisking to deglaze the bottom of the pan. Cook until the liquid reduces by half. Add the crushed tomatoes and stir to combine. Add salt and pepper to taste and a pinch of sugar. Add the dried oregano and basil. Reduce the heat to low and simmer for 30 minutes.

1 teaspoon active dry yeast
4 cups all-purpose flour
1 teaspoon kosher salt

CLAIRE'S PEPPERONI PIE

This is another one of my favorite recipes from the "North End Italian Cookbook". Quick, easy, delicious and versatile. I serve it as a main dish with a salad. It can be served also as an appetizer or as a brunch or lunch dish. You can dress it up with chopped fresh herbs such as oregano, parsley or basil.

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with foil and lightly grease the foil with olive oil. Remove the pizza dough from the refrigerator and let sit at room temperature for 30 minutes.
  • In a small bowl combine the garlic, Parmesan, parsley and 1/4 cup olive oil. Set aside.
  • Lightly dust a work surface with flour and roll out the pizza dough into a 12-by-14-inch rectangle. Arrange the dough with the 14-inch side parallel to you. With a ruler, mark every 4 inches along the 12-inch side. Cut the dough straight across at the marks to make three 4-inch-wide strips. Brush top of the strips with 1 tablespoon olive oil. Shingle the pepperoni slices over the dough strips. Sprinkle 3/4 to 1 cup of the mozzarella in a line down the center of each strip.
  • Roll up each dough strip into a long log, as you would for cinnamon rolls. It is easiest to begin by folding the bottom of the dough up over the cheese; if there is any cheese sticking out, stuff it back into the roll. Continue rolling the dough over itself until it forms a log with dough on the outside and all of the pepperoni and mozzarella on the inside. Pinch the seams together, then pinch the sides together. Lightly brush the logs all over with olive oil and transfer them, seam-side down, to the prepared baking sheet.
  • Bake until golden brown, 12 minutes. Brush the tops of the logs generously with the garlic mixture and return to the oven for another 3 minutes, until the garlic is very fragrant but not yet browned. Let cool for 10 minutes.
  • Transfer the pepperoni rolls to a cutting board and slice into 1 1/2-inch pieces. Serve immediately with marinara sauce.
  • Heat the olive oil over medium heat in a medium saucepot. Add the onions and salt and saute until softened, 2 minutes. Add the garlic and cook an additional 30 seconds until fragrant but not browned. Stir in the tomato paste, oregano and crushed red pepper; cook 30 seconds to toast the tomato paste and spices. Stir in the chopped tomatoes. Bring the sauce to a boil, reduce the heat to medium low and simmer for 10 minutes, stirring often. Remove from the heat and adjust the seasoning with salt to taste. Keep warm until ready to serve, or cool completely and refrigerate in an airtight container.

2 tablespoons minced garlic (about 2 large cloves)

1 teaspoon kosher salt
2 teaspoons minced garlic (about 2 large cloves)
2 tablespoons tomato paste
1/2 teaspoon dried oregano
Pinch crushed red pepper
One 26-ounce box chopped tomatoes, such as Pomi

20 PEPPERONI RECIPES THAT GO BEYOND PIZZA - INSANELY GOOD

  • Homemade Pepperoni Pizza. There’s really no better way to get the ball rolling than with pepperoni pizza, is there? This pizza is all that you can ask for in the classic dish.
  • Pepperoni Stromboli. Another fun fact: did you know that stromboli is actually an American creation? It was invented by Italian Americans in Philadelphia.
  • Antipasto Skewers. I don’t know why, but to me, any kind of food threaded into skewers automatically becomes 10 times tastier. Take this appetizer, for instance.
  • Pizza Stuffed Mushrooms. Mushroom on pizza is one thing. These pizza-stuffed mushrooms are a whole other ball game. This fun take on the classic will definitely turn your life upside down!
  • Pepperoni Pizza Puffs. These pizza puffs are actually mini muffins loaded with cheese and pepperoni. They might be small, but they’re big on flavor. They’re soft, fluffy, and simply to die for.
  • Pepperoni Pizza Monkey Bread. There’s absolutely nothing foolish about this monkey bread! A mash-up between pepperoni pizza and pull-apart bread, this appetizer won’t last long.
  • Pepperoni Pizza Grilled Cheese. Craving homemade pizza but have no time or energy to make one? Here’s the perfect solution. This has everything you want in a pizza: a toasty crust, marinara sauce, and lots of stretchy cheese and pepperoni.
  • Italian Chopped Salad. I always say I’m not fond of salads, but there are a few exceptions. This Italian chopped salad is one of them. You see, my main thing against salads is that they’re mostly overflowing with greens, and lacking the meats, cheeses, you know, all the good stuff.
  • Keto Pepperoni Pizza Casserole. Occasionally, I like to dip my toes in healthy recipes. But when I do, I make sure the dishes taste so good no one will realize they’re good for you.
  • Pepperoni Pizza Dip. If you’re looking for a guaranteed way to make your party a huge success, look no further. This pepperoni pizza dip is the answer.
