These fried okra patties are made from fresh okra and onion in a cornmeal batter. A delightful southern-style snack.

Steps:

  • Heat 1 inch of oil in a large skillet to 375 degrees F (190 degrees C).
  • In a large bowl, mix together the okra, onion, salt, pepper, water and egg. Combine the flour, baking powder and cornmeal; and stir that into the okra mixture.
  • Carefully drop spoonfuls of the okra batter into the hot oil, and fry on each side until golden, about 2 minutes per side. Remove with a slotted spoon, and drain on paper towels.

3 cups vegetable oil for frying
1 pound okra, finely chopped
1 cup finely chopped onion
1 teaspoon salt
¼ teaspoon pepper
½ cup water
1 egg
½ cup all-purpose flour
1 teaspoon baking powder
½ cup cornmeal

Steps:

  • 1. Drain okra,mash well with fork.Add egg and beat alittle.Sift dry ingredients together i use a wire whisk to do this.Drop bt tbsp.into hot oil fry until golden brown turn fry other side.Remove to plate lined with paper towel to drain

2 c okra,cooked & drained may use canned,drained
1 egg
1 tsp salt
1/4 tsp baking powder
4 Tbsp all purpose flour
2 Tbsp cornmeal

Steps:

  • 1. Wash okra, drain and slice. Slice the okra a little thinner then you would if you were just frying the okra.
  • 2. In large mixing bowl, mix salt, baking power, cornmeal, flour and egg. Add water and mix well. Stir in okra.
  • 3. Drop by spoonfuls into small amount of hot oil in skillet and fry as you would a pancake, turning to brown each side. Each side takes about 10 minutes over medium heat.

3 c okra, fresh
1 1/2 c yellow cornmeal
1 tsp salt
2 tsp baking powder
1/2 c flour
1 egg
1/2 c hot water
