- In a large pitcher, stir together pineapple juice, spiced rum, and lime juice. Refrigerate until chilled. Serve over ice, garnished with lime slices.

PINEAPPLE RUM COCKTAILS
Steps:
- Purée 2 cups pineapple chunks, 1/4 cup rum, 2 tablespoons Cointreau, 1/2 tablespoon lime juice, 1/4 cup sugar, and 2 cups ice in a blender at high speed until very smooth, about 1 minute. Transfer to a large pitcher, then make 2 more batches in same manner, transferring to pitcher. Serve immediately.

Steps:
- Blend one fourth of pineapple juice with all of mint and sugar in a blender until mint is finely chopped, then pour into a pitcher with lime juice and remaining pineapple juice. Chill until ready to use.
- Just before serving, fill tall glasses halfway with ice and add 3 tablespoons rum to each, then top with 1/2 cup juice.
RUM AND PINEAPPLE JUICE
This easygoing highball tastes like the tropics. Nutmeg freshly grated over the top adds a hint of spice.

- Store container on a cool, dark shelf, stirring and tasting once a day, until rum reaches desired flavor, at least 1 week but preferably 2.
