- Preheat oven to 350 degrees. Lightly grease a 9 x 13 baking dish. In the prepared baking dish, layer pie filling over crushed pineapple.
- Sprinkle cake mix over the top, smoothing evenly and covering the top. Pour the melted butter or margarine over the top, covering evenly. Top with the coconuts and nuts.
- Bake in the preheated oven for about 50 to 60 minutes or until brown on top and bubbly.
- ** Optional: -- omit coconut and add extra 1/2 cup of nuts -- Substitute pecans, peanuts or cashews for macadamia nuts.

- Melt butter in the microwave and allow to cool. Combine the crumbs and butter and toss together until incorporated. Press 2 cups of the crumb mixture firmly into an 9×9 square pan and bake for 8-10 minutes. Place on wire rack to cool.
- Beat the cream cheese and butter together until creamy. Turn the mixer down to low and add the powdered sugar one cup at a time until incorporated. Turn up and beat well for a minute or so. Add a heaping tablespoon of the drained pineapple and stir in with a rubber spatula. Spread the cream cheese and pineapple mixture over the crust.
- Fold the remaining pineapple into the Cool Whip and spread on top of the cream cheese mixture. Sprinkle the remaining graham cracker crumb mixture on top. Refrigerate for at least 4 hours, preferably overnight.

- Remove the leaves of the pineapple without throwing them away then cut it in 2 on the lenght-wise. Empty one of the pineapple halves. Dice the removed flesh, keep the skin as a container and reserve the excess juice in a container. Mix the mascarpone, diced pineapple, powdered sugar and the zest of 1/2 a lime.
- Place plastic wrap in the empty pineapple half. Break the cookies in half and dip them in the pineapple juice. Place the soaked cookies vertically along the sides of the fruit and fill the pineapple with layers of cream and cookies. Close the plastic wrap and place the pineapple in the refrigerator for 30 minutes.
- Unmould by removing the plastic wrap and turn the cake over. Arrange the pineapple leaves to recreate the shape of the fruit and then cover the cake with the remaining cream and pecans. Serve chilled.
