- 1. Chop 2 large unpeeled red apples into small cubes. Mix with lemon juice to keep from browning.
- 2. In a large bowl, mix together apples, macadamia nuts, pineapple tidbits, coconut, and cranberries.
- 3. In a mixing bowl, whip together cream cheese and 4 Tbsp pineapple juice.
- 4. Pour the cream cheese mixture into the fruit and stir until combined.
- 5. I like to present the Waldorf Salad in 20-25 decorative spoons but you can also use small bowls and serve 8-10 people as a side dish.
JENNY'S SWEET WALDORF SALAD
I couldn't ever find the perfect Waldorf salad - one that wasn't too mayonaise-y tasting, yet one that still held enough of the original flavor to be called a Waldorf. - In a large bowl, combine the Granny Smith apples, Red Delicious apple, Asian pear, celery, almonds, golden raisins, grapes and cranberries. In a separate bowl, stir together the yogurt, white sugar, brown sugar, mayonnaise, lemon juice and cinnamon. Pour the dressing over the fruit mixture and stir gently until evenly coated.

THE ORIGINAL WALDORF SALAD
"Millions who never visited the Waldorf owe him a debt," The New York Times wrote in 1950, upon Oscar Tschirky's death. Mr. Tschirky, a Swiss immigrant who became known as "Oscar of the Waldorf," is credited with creating this piece of Americana in 1893, a timeless dish whose popularity has spread far past the Waldorf's exclusive doors and into home kitchens. Over time, variations would include blue cheese, raisins and chopped walnuts, which can be added here alongside the celery and apples. But the original is an exercise in simplicity: four ingredients that have lived on for over a century.

PINEAPPLE WALDORF SALAD - NO MAYO
The last time I made waldorf salad, my 4-year-old son asked if we could have it without mayo the next time. I was worried about the apples browning and I didn't have any lemon juice. I did have some crushed pineapple which did the trick and it all tastes really good, too.

I found this on the internet a couple of years ago when our apple tree was very abundant. I am not sure where it came from but it is good. The tree is loaded again this year so I expect to be making it again soon. Cook time is chill time.
